This inspired Via Carota Salad recipe aims to bring that celebrated experience to your home kitchen, guiding you through the creation of a stunning, layered green salad featuring the freshest butter lettuce, crisp frisee, and hearty romaine, all generously drizzled with the most exquisite shallot-sherry vinaigrette you’ll ever taste. Prepare to elevate your salad game, because this isn’t just a side dish—it’s the star of the show.

The Enchantment of Via Carota and Its Signature Green Salad
Tucked away on a charming cobblestone street in Manhattan’s West Village, Via Carota exudes an old-world Italian trattoria ambiance. It’s a place where reservations are a foreign concept, adding to its allure and mystique. Arriving early might grant you a better spot on the waiting list, where your name is unceremoniously scrawled in chalk on an exposed pipe – a quirky detail that only enhances its charm. This unique queuing system allows eager diners to literally see their place in the Via Carota universe, building anticipation for the moment they’re finally seated, perhaps with an ice-cold Negroni in hand, ready to indulge.
The menu at Via Carota is a testament to rustic Italian cooking, boasting an impressive array of delectable dishes. From the tender grilled octopus accompanied by vibrant green olive pesto to a delightful fritto misto and rich pappardelle with wild boar ragu, every item promises an authentic and memorable dining experience. Yet, for many, myself included, the true highlight—the dish that consistently steals the spotlight—is their deceptively simple yet utterly magnificent green salad. It’s a testament to the power of quality ingredients and masterful preparation, proving that sometimes, the simplest dishes can leave the most lasting impression.
The brilliance of the Via Carota green salad lies in its thoughtful composition. A harmonious blend of diverse lettuces creates an unparalleled textural delight, offering a symphony of crispness, tenderness, and slight bitterness with every forkful. But what truly sets this salad apart is its shallot-sherry vinaigrette. This dressing isn’t merely a complement; it’s a revelation. Its balanced tang, subtle sweetness, and aromatic depth make it so incredibly delicious, you might be tempted to drink it. Indeed, this might just be the last green salad recipe you’ll ever need to master, serving as the perfect foundation for countless meals.
Crafting a “Mile-High” Layered Green Salad
While the quality of the ingredients is undeniably crucial, the true artistry of this layered green salad lies in its assembly. Forget haphazardly tossing everything into a bowl; the magic happens when you build this salad in deliberate, elegant layers. This method isn’t just for a stunning presentation, though it certainly achieves that. More importantly, it allows the exquisite shallot-sherry vinaigrette to permeate every leaf, creating tiny pockets where the dressing can nestle and infuse the butter lettuce and romaine with its incredible flavor. When completed, the salad reaches an impressive height, transforming a humble collection of greens into a visual and gustatory feast.
Selecting the Perfect Greens for Your Via Carota Salad
The foundation of any great green salad is, of course, the greens themselves. For this particular Via Carota-inspired recipe, we recommend a blend that offers a variety of textures and subtle flavor notes. Our preferred combination, readily available at most local grocery stores, includes crisp butter lettuce, robust romaine hearts, and delicate frisee. These three lettuces provide a delightful contrast:
- Butter Lettuce: Known for its soft, tender leaves and mild flavor, butter lettuce provides a smooth, melt-in-your-mouth component.
- Romaine Hearts: Offering a satisfying crunch and a slightly bitter, refreshing taste, romaine adds structure and body to the salad.
- Frisee: With its fine, curly texture and distinct bitter notes, frisee introduces an intriguing complexity that truly elevates the overall profile.
In fact, the original Via Carota salad often incorporates a broader selection of five lettuces, including watercress and endive in addition to frisee, butter, and romaine. If you have access to these, they would be welcome additions, further enhancing the textural and flavor dimensions of your salad. Ultimately, while any fresh green lettuces will suffice, we strongly encourage using at least three different types. This variety is key to achieving the desired balance of texture, visual appeal, and nuanced taste that makes this green salad so exceptional.

The Irresistible Shallot-Sherry Vinaigrette: A Recipe for Perfection
The heart and soul of this Via Carota Salad truly lie in its phenomenal vinaigrette. It’s a harmonious blend of savory, tangy, and subtly sweet notes that coats each leaf with an addictive flavor. As its name suggests, the stars of this dressing are fresh shallots and rich sherry vinegar. But the magic doesn’t stop there; this vinaigrette also features zesty Dijon mustard, aromatic garlic, fruity extra virgin olive oil, a touch of honey for balance, fragrant thyme, and a hint of warm water to help soften the shallots and aid emulsification.
Vinaigrette Variations and Ingredient Insights
Understanding the role of each ingredient and knowing how to make smart substitutions can empower you to perfect this dressing or adapt it based on what you have on hand:
- Sherry Vinegar: This is a key player, providing a nuanced, slightly nutty, and sweet acidity. If sherry vinegar isn’t available, you can substitute it with either rice wine vinegar for a milder tang or red wine vinegar for a more robust flavor. However, we strongly advise against using balsamic vinegar, as its strong, sweet flavor profile would dramatically alter the delicate balance of this particular dressing.
- Dijon Mustard: Non-negotiable! Dijon mustard acts as a crucial emulsifier, helping to bind the oil and vinegar into a creamy, stable dressing. It also contributes a sharp, pungent flavor that rounds out the vinaigrette beautifully. While we generally use smooth Dijon, coarse-ground Dijon also works wonderfully, adding a bit of textural interest. Avoid yellow mustard, which has a very different, less complex flavor.
- Shallots: These elegant members of the onion family are essential for their delicate, sweet, and garlicky flavor, which is milder and more refined than a standard onion. They provide a foundational savory note without overwhelming the other ingredients. If shallots are completely unavailable, a very finely minced portion of a mild onion (about 1/4 of a medium-sized onion) can be used as a last resort, but prepare for a slightly sharper flavor.
- Garlic: Freshly grated or made into a paste, garlic adds a pungent, aromatic kick that complements the shallots and vinegar.
- Honey & Thyme: These ingredients contribute subtle sweetness and herbaceous depth, respectively. While we prefer the vinaigrette with both, forgoing them won’t ruin the dressing entirely. It will simply result in a slightly less complex flavor profile, leaning more towards tangy and savory. Feel free to adjust based on your preference or pantry availability.
- Extra Virgin Olive Oil: Use a good quality olive oil here, as its flavor is prominent. It brings richness and body to the vinaigrette.
The beauty of this shallot-sherry vinaigrette is its versatility and incredible flavor. Master this dressing, and you’ll have a secret weapon in your culinary arsenal.
How to Make the Ultimate Via Carota Green Salad
Preparing this exceptional layered green salad is surprisingly straightforward, relying more on technique than complex steps. Follow these instructions to recreate the magic of Via Carota in your own kitchen:
- Prepare the Greens: Begin by roughly chopping the romaine hearts and frisee. The butter lettuce leaves should remain whole to provide broad, tender layers. Thoroughly wash all the lettuces and, crucially, dry them very well. Excess water will dilute the dressing and make your salad soggy. Set the dried greens aside.
- Mince Shallots and Garlic: Finely chop your large shallot. For the garlic, use a zester to grate it into a fine pulp, or create a paste using the side of your knife or a garlic press. Place the minced shallot and garlic into a medium-sized mixing bowl.

- Soften the Shallots and Garlic: To the bowl containing the shallot and garlic, add the sherry vinegar and 1 tablespoon of warm water. Stir well and let this mixture sit for at least 5 minutes. This crucial step helps to mellow the raw bite of the shallots and garlic, infusing the vinegar with their delicate flavors.
- Whisk the Vinaigrette: Now, add the Dijon mustard, honey, and dried thyme to the shallot-vinegar mixture. Whisk vigorously until all ingredients are well combined.
- Emulsify with Olive Oil: Slowly begin to drizzle in the extra virgin olive oil, whisking continuously. This steady, gradual addition while whisking is essential for creating a beautifully emulsified, smooth, and creamy vinaigrette. Continue until all the olive oil is incorporated.
- Season the Vinaigrette: Taste the dressing. Add salt and freshly ground black pepper to your preference. Remember, proper seasoning is key to bringing out all the flavors.

- Assemble in Layers: On a large serving platter or in a wide, shallow bowl, begin assembling your salad in layers. Start with a foundation of a few butter lettuce leaves, then add a handful of romaine and frisee. Lightly drizzle a portion of the vinaigrette over this first layer.
- Build the “Mile-High” Stack: Continue this layering process, alternating between the different lettuces and drizzling vinaigrette over each new addition. Aim for a generous stack, allowing the salad to build significant height. This ensures every bite is coated with dressing and offers a satisfying mix of textures.
- Serve Immediately: Once all the lettuce is used and the salad is impressively tall, finish with a final grind of fresh black pepper. Serve your magnificent Via Carota Green Salad immediately to enjoy its optimal crispness and flavor.

What to Serve Alongside Your Perfect Green Salad
The beauty of the Via Carota-inspired green salad lies in its remarkable versatility. This isn’t just a simple side; it’s a palate cleanser, a textural counterpoint, and a flavor enhancer that complements an astonishing array of main courses. The better question isn’t what to serve with it, but rather, what doesn’t it pair well with?
For pasta lovers, this salad is the quintessential light complement to rich, comforting dishes. Imagine the vibrant freshness cutting through the creamy indulgence of Bucatini Cacio e Pepe or the lusciousness of a classic Spaghetti Carbonara. It also provides a welcome freshness alongside hearty potato gnocchi, balancing the meal beautifully.
When it comes to meat dishes, this elegant green salad is almost always a staple at our table. Its crisp texture and bright vinaigrette offer a refreshing contrast to robust flavors like juicy grilled pork chops, flavorful grilled chicken thighs, or a perfectly seared ribeye steak. It acts as a delightful counterpoint, ensuring the meal feels balanced and satisfying.
And, of course, there’s no better companion for a classic pizza night. The light, tangy salad provides a welcome break from the richness of cheese and toppings. In fact, one of life’s simple pleasures is using a leftover pizza crust to sop up every last drop of the delectable vinaigrette remaining on your plate—a true sign of a well-enjoyed meal.

Via Carota Salad Recipe
By James Delmage
Romaine, frisee, and butter lettuces are dressed with a sherry shallot vinaigrette in this salad inspired by NYC’s Via Carota.

Prep time: 20 mins
Total time: 20 mins
Servings: 4 People
Ingredients
For the salad
- 1 head butter lettuce
- 1 small frisee, roughly chopped
- 2 hearts romaine lettuce, roughly chopped
For the vinaigrette
- 1 large shallot, minced
- 1 clove garlic, grated or paste
- 3 tablespoons sherry vinegar
- 1 tablespoon warm water
- 2 teaspoons Dijon mustard
- 1 teaspoon honey
- 1/2 teaspoon dried thyme
- 1/2 cup extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
For the vinaigrette
- To a mixing bowl, add the shallot, garlic, sherry vinegar, and warm water. Allow to sit for at least 5 minutes to soften the shallots.
- Add the Dijon mustard, honey, and dried thyme and whisk until incorporated.
- Slowly drizzle in the olive oil while continuing to whisk.
- Add salt and pepper. Taste test and make any final adjustments to salt and pepper.
For the salad
- On a serving platter, begin arranging the lettuces so a little of each is included.
- Begin to spoon the vinaigrette over the first layer of lettuces.
- Repeat until all the lettuce is used and there are multiple layers resembling a pile.
- If desired, top with freshly ground black pepper and serve immediately.
Notes
- The vinaigrette recipe is just enough for the amount of lettuce used in this recipe. If you’d like more, double the recipe. It is great to have on hand in case you’d like extra and it can last up to 3 days when stored in an air-tight container.
- This recipe uses three different types of lettuce, but use what is available and most economical for you.
- We used smooth Dijon mustard for the vinaigrette, but coarse ground mustard works well too.
- Eat immediately so the salad is not soggy.
