Succulent Bacon-Wrapped Pork Tenderloin with Creamy Dijon Sauce: Your Go-To Recipe for Weeknights & Holidays

Effortlessly Impressive: The Ultimate Bacon-Wrapped Pork Tenderloin
There’s something truly special about a dish that effortlessly combines elegance with incredible flavor, making it suitable for any occasion. This bacon-wrapped pork tenderloin recipe is precisely that – a culinary masterpiece that delivers on both taste and presentation. I find myself returning to this recipe time and again, not just because it’s a showstopper, but because it’s surprisingly straightforward to prepare.
The magic begins with the bacon. As it crisps and renders during cooking, it imbues the lean pork tenderloin with an unparalleled depth of smoky, savory flavor, while also locking in moisture to ensure every slice is incredibly juicy and tender. This ingenious wrapping method elevates the pork from good to exceptional, making it a favorite in my kitchen.
While the preparation is simple enough for a busy weeknight dinner, the final result is undeniably impressive, making this bacon-wrapped pork tenderloin a perfect centerpiece for holiday gatherings and special occasions. Imagine serving this beautifully roasted tenderloin at your Easter brunch or as the star of your Christmas dinner – it’s guaranteed to earn rave reviews from family and friends.
To truly unlock the full potential of this dish, I wholeheartedly recommend pairing it with the creamy Dijon pan sauce. This luscious sauce, crafted from the delectable pan drippings, provides a tangy, rich counterpoint to the smoky pork and bacon. It ties all the flavors together, creating a harmonious and unforgettable meal. While the tenderloin is delicious on its own, this pan sauce elevates it to an entirely new level of gourmet dining. However, if time is short, the bacon-wrapped pork tenderloin is still a fantastic standalone meal.
Choosing the right side dishes can transform your meal. For a fresh, vibrant accompaniment, consider serving your bacon-wrapped pork tenderloin with crisp green beans almondine, tender garlic sautéed spinach, or perfectly charred roasted broccoli. These green sides offer a delightful contrast in texture and flavor, adding freshness to the rich pork. If you’re looking for something more substantial, crispy roasted potatoes, zesty Greek lemon potatoes, or fluffy rice pilaf all make excellent companions, soaking up every last drop of that incredible pan sauce.
Essential Ingredients for Your Bacon-Wrapped Pork Tenderloin
Crafting this flavorful bacon-wrapped pork tenderloin requires a thoughtful selection of fresh, high-quality ingredients. Below, you’ll find a visual guide to everything you need, followed by specific notes to help you make the best choices for a truly outstanding meal.

- Pork Tenderloin: The star of our dish. Pork tenderloins are typically sold in packages containing two smaller tenderloins, often weighing around 1.5 to 2 pounds total. For optimal results and a substantial roast, I highly recommend placing both tenderloins side-by-side before wrapping them in bacon. This creates a larger, more uniform roast that cooks beautifully and stays incredibly moist.
- Bacon: The secret to infusing flavor and retaining moisture. For this recipe, opt for regular-cut bacon rather than thick-cut. Regular-cut bacon crisps up more evenly around the tenderloin, creating a perfect, flavorful crust without overwhelming the delicate pork. Its fat renders beautifully, adding richness to both the pork and the eventual pan sauce.
- Dijon Mustard: More than just a flavor enhancer, Dijon mustard plays a crucial dual role. Its sharp, tangy notes perfectly complement the richness of the pork and bacon, while its texture acts as a natural adhesive, helping the bacon strips firmly adhere to the tenderloin as it cooks. This ensures a consistent, crispy bacon crust.
- Dry White Wine: An essential component of our savory pan sauce. A good quality dry white wine, such as Pinot Grigio or Sauvignon Blanc, will deglaze the pan, capturing all the flavorful browned bits (fond) left behind by the pork and bacon. This adds a layer of sophisticated depth and acidity to the sauce, balancing its richness.
- Low-Sodium Chicken Stock: The foundation of our creamy pan sauce. Using low-sodium chicken stock or homemade chicken stock without added salt gives you complete control over the final seasoning. It ensures your sauce is flavorful without being overly salty, allowing the other ingredients to shine.
- Heavy Cream (Optional): While not pictured with the other ingredients, heavy cream is a fantastic optional addition to your pan sauce. A splash of heavy cream can mellow out the Dijon’s sharpness, create a silkier, richer texture, and increase the overall volume of the sauce, making it even more indulgent.

Step-by-Step Guide: Crafting Your Bacon-Wrapped Pork Tenderloin
Follow these easy, numbered steps to create a truly unforgettable bacon-wrapped pork tenderloin with a luscious creamy Dijon sauce. Each step is designed for clarity, ensuring a smooth cooking process from start to finish.
- Begin by preheating your oven to 400°F (200°C) to ensure it’s ready for roasting. While the oven heats, thoroughly pat the pork tenderloin dry with paper towels. This crucial step helps create a beautiful sear and ensures the seasonings adhere properly. Season the pork generously on all sides with garlic powder, salt, and freshly ground black pepper. Then, spread a tablespoon of Dijon mustard evenly over all surfaces of the seasoned pork. If you’re using two smaller tenderloins, place them snugly side-by-side to form one larger roast before applying the mustard.

- Arrange the bacon slices on a clean cutting board, slightly overlapping them to create a mat that is roughly the same length as your pork tenderloin. Carefully place the prepared tenderloin (or combined tenderloins) in the center of the bacon mat.
- Now, artfully wrap the bacon slices over the pork, ensuring it is completely covered from end to end. The Dijon mustard will act as a binder, helping the bacon stay in place. If needed, you can gently press the bacon to secure it or use toothpicks to hold any loose ends.

- Heat a heavy, oven-safe pan (a cast-iron skillet works wonderfully) over medium-high heat on your stovetop. Add the neutral oil, allowing it to shimmer slightly, indicating it’s hot enough. Once hot, carefully place the bacon-wrapped pork tenderloin into the pan.
- Sear the pork on all sides until the bacon is beautifully browned and crispy, typically about 3 minutes per side. This crucial step develops incredible flavor and texture. Once seared, transfer the pan to your preheated oven, making sure the bacon seam side is facing down to prevent unraveling during roasting. Continue to cook until the pork reaches an internal temperature of 135°F (57°C) for a perfect medium-rare, or up to 145°F (63°C) for medium. Remove the pan from the oven, transfer the cooked pork to a cutting board, and loosely tent it with foil. Allow it to rest for at least 10 minutes; this allows the juices to redistribute, ensuring a tender and succulent result.

- While the pork rests, place the same pan (with all its flavorful drippings) back on the burner over medium heat. Add 2 tablespoons of butter and the finely diced shallots. Sauté the shallots, stirring occasionally, until they become soft and translucent, which should take about 2 minutes. This step creates the aromatic base for your rich pan sauce.
- Sprinkle the flour into the pan with the softened shallots and butter. Stir constantly, cooking for 1-2 minutes. This is called making a roux, and it helps to thicken the sauce and cook out the raw flour taste. Continue stirring until all white specks of flour have disappeared and the mixture turns a light golden color.

- Pour in the dry white wine and chicken stock, then increase the heat to high. Using a wooden spoon, vigorously scrape the bottom of the pan to dislodge any browned bits (fond). These flavorful bits are essential for a rich sauce. Allow the sauce to boil rapidly for about 2 minutes to slightly reduce and concentrate the flavors, then reduce the heat to a gentle simmer. Stir in the remaining Dijon mustard, honey, fresh thyme, minced parsley, and smoked paprika. Let it simmer for another few minutes, allowing the flavors to meld beautifully. Taste the sauce and season with salt and pepper as needed. Remove the pan from the heat and whisk in the remaining cold butter, one cube at a time, until the sauce is smooth and glossy. If you prefer a thinner sauce or want to temper the mustard flavor, whisk in the optional 1/2 cup of heavy cream. Finally, slice the rested pork tenderloin into thick medallions and serve immediately with a generous drizzle of the warm, creamy pan sauce. Enjoy every delicious bite!
Expert Tips for a Flawless Bacon-Wrapped Pork Tenderloin
- Combine Two Tenderloins for a Heartier Roast: Often, pork tenderloins are sold in packages containing two smaller, thinner cuts. Instead of cooking them separately, I highly recommend placing them side-by-side and treating them as one larger roast before wrapping them with bacon. This creates a more substantial, evenly sized piece that’s easier to handle and ensures consistent cooking. The bacon will effectively fuse the two tenderloins together during the roasting process, maintaining a cohesive shape and enhancing moisture retention.
- Achieve Perfect Doneness with a Digital Thermometer: The key to succulent pork tenderloin is not to overcook it. Pork tenderloin is lean and can dry out quickly. For precision and food safety, always use a reliable digital probe thermometer. Insert it into the thickest part of the tenderloin. Aim for an internal temperature between 135-140°F (57-60°C) for a perfect medium-rare to medium, remembering that the temperature will rise slightly (carryover cooking) during resting. The USDA recommends a minimum safe internal temperature of 145°F (63°C) for pork, followed by a 3-minute rest, which will result in a medium-well doneness. Adjust to your preferred level of doneness.
- Elevate Your Meal with the Creamy Dijon Pan Sauce: The accompanying Dijon pan sauce is more than just an accent; it’s an integral part of this recipe that beautifully complements the rich, smoky flavors of the bacon-wrapped pork tenderloin. The tang of the Dijon cuts through the richness, while the creamy texture adds a luxurious finish. If you find the mustard flavor too assertive for your palate, don’t hesitate to whisk in some heavy cream at the end. This not only mutes the mustard’s intensity but also significantly increases the volume of your delicious sauce, ensuring there’s plenty for everyone!
- Secure the Bacon: While the Dijon mustard helps the bacon adhere, some tenderloins might have an irregular shape. For extra security, especially if you’re aiming for a flawless presentation, you can use kitchen twine to tie the bacon around the pork at intervals, or simply use a few toothpicks to hold any stubborn edges in place before searing.
- Rest is Best: Never skip the resting period! After removing the pork from the oven, tent it loosely with foil and let it rest for at least 10-15 minutes. This allows the muscle fibers to relax and reabsorb the juices, resulting in a significantly more tender and moist piece of meat. Slicing too early will cause the juices to run out, leading to dry pork.

Notes
- Combining Tenderloins: Pork tenderloin is often sold in 1.5-2 pound packs containing two thinner tenderloins. It is recommended to place both together before wrapping with bacon to create a more substantial and evenly cooked roast.
- Securing the Bacon: The Dijon mustard helps the bacon adhere to the tenderloin. For extra security or if your tenderloin is irregularly shaped, you can use kitchen twine or a few toothpicks to hold the bacon in place during cooking.
- Internal Temperature: For optimal tenderness and juiciness, pork tenderloin is best cooked to a medium doneness, reaching an internal temperature of 135-140°F (57-60°C) before resting. The USDA recommended minimum safe internal temperature for pork is 145°F (63°C) with a 3-minute rest, which will yield a medium-well doneness. Cook to your desired preference.
- Bacon Choice: While any type of regular-cut bacon can be used, keep in mind that a more smoky or strongly flavored bacon will influence the final taste of the dish.
- Heavy Cream Option: Heavy cream is optional but a wonderful addition. It can be added to temper the mustard flavor in the sauce, making it milder and richer, and also increases the sauce’s yield.
- Skipping the Pan Sauce: To save time, the pan sauce can be omitted. The bacon-wrapped pork tenderloin is delicious on its own, but the sauce truly elevates the meal.
- Leftovers: Leftover bacon-wrapped pork tenderloin can be stored in an airtight container in the refrigerator for up to 3 days. It can be gently reheated in the oven or microwave.
