Mushrooms are stuffed with a mixture of breadcrumbs, parsley, Parmigiano Reggiano, white wine and lemon juice and baked until tender.

Ingredients

  • 1 1/2 pounds (680g) white or baby Bella mushrooms (see notes below)
  • 6 cloves garlic, minced
  • 1 cup (100g) plain breadcrumbs
  • 10 tablespoons (56g) grated Parmigiano Reggiano, divided (1/2 cup for stuffing and 2 extra tablespoons for topping)
  • 1/2 cup (120g) olive oil
  • 1 1/2 teaspoons kosher salt
  • 1/4 teaspoon crushed hot red pepper flakes (optional, for a subtle kick)
  • 1/2 cup (120g) dry white wine
  • 2 cups (480g) low sodium chicken stock, divided (homemade is best!)
  • 3 tablespoons (45g) fresh lemon juice
  • 1/2 cup minced flat-leaf Italian parsley
  • 1 large lemon, cut into wedges (for serving)

Instructions

  • Preheat oven to 425°F (220°C) and set the rack to the second highest level. Cut off the very end of the mushroom stems and discard. Remove the remaining portion of the stem and mince finely. Save 3/4 cup of minced stems for the stuffing. You can discard any remaining bits or save them for another purpose.
  • Heat a pan over medium-low heat with the 1/2 cup of olive oil. Add the minced garlic and sauté until golden (about 2-3 minutes). Once golden, add the hot red pepper flakes and cook for another 30 seconds. Next, turn the heat to medium, add the minced mushroom stems, and cook for 5 minutes, stirring occasionally.
  • Pour in the 1/2 cup of dry white wine and cook for 2 minutes to reduce slightly and allow the flavors to meld.
  • Turn off the heat. Add 1/2 cup of the chicken stock, the fresh lemon juice, breadcrumbs, 1/2 cup of grated Parmigiano Reggiano cheese, 1 1/2 teaspoons kosher salt, and the 1/2 cup of minced parsley to the pan. Mix all ingredients thoroughly until well combined. Taste the stuffing and make any adjustments to salt, pepper, or lemon juice as needed. The stuffing should be very moist and cling to your fingers; if it’s too dry, add a bit more of the reserved chicken stock, one tablespoon at a time, until the desired consistency is reached.
  • Generously stuff each mushroom cap with the prepared filling, mounding it slightly on top.
  • Place the stuffed mushrooms into a large baking dish. Pour the remaining 1 1/2 cups of chicken stock into the bottom of the dish around the mushrooms. If you have any remaining stuffing (no more than 1/2 cup), sprinkle it into the chicken stock; it will create a delicious pan sauce. Sprinkle the remaining 2 tablespoons of Parmigiano Reggiano on top of the stuffed mushrooms.
  • Bake for 20-25 minutes, or until the mushrooms are tender and the stuffing is golden brown. For extra color, you may broil for the last 60 seconds, watching carefully to prevent burning.
