Essential Recipe Ingredients for Italian Sticky Ribs
Crafting these delightful Italian-Style Sticky Ribs with Crispy Potatoes requires a selection of fresh, high-quality ingredients. Below, you’ll find a detailed overview of what you’ll need, along with some helpful notes to guide your choices. The image below showcases all the key components that come together to create this incredible dish.

- Pork Ribs: For this recipe, we recommend using 4 pounds, or 2 racks, of pork baby back ribs. Their smaller size and excellent meat-to-bone ratio make them ideal for quick cooking and tender results. While baby back ribs are preferred, you can certainly substitute with spare ribs or St. Louis-style ribs. Keep in mind that these cuts are larger and will require a slightly longer baking time to reach optimal tenderness. Ensure the membrane on the back of the ribs is removed for the best texture.
- Potatoes: Yukon Gold potatoes are my top choice for this recipe. Their waxy texture and creamy flesh hold up exceptionally well during the roasting process, becoming beautifully crispy on the outside while remaining tender and fluffy within. They also have a lovely buttery flavor that complements the ribs perfectly. Other waxy varieties like red bliss or new potatoes could also work, but avoid overly starchy potatoes like Russets, as they tend to fall apart.
- Signature Sauce Ingredients: The heart of this dish lies in its sticky, sweet, and sour sauce. You’ll need a combination of:
- Vinegar: Red wine vinegar provides a crucial tanginess and depth of flavor that is characteristic of Scarpariello-inspired dishes.
- Chicken Stock: Low-sodium chicken stock forms the liquid base, adding richness without overpowering the other flavors.
- Dry White Wine: A splash of dry white wine (such as Pinot Grigio or Sauvignon Blanc) enhances the complexity of the sauce, adding a subtle fruity and acidic note.
- Honey: This provides the sticky sweetness that balances the vinegar and cherry peppers, creating that irresistible glaze.
- Garlic: Fresh garlic, generously sliced, infuses the sauce with its aromatic pungency.
- Olive Oil: Used for sautéing the garlic and for seasoning the potatoes, a good quality olive oil is essential.
- All-Purpose Flour: A small amount of flour acts as a thickening agent, giving the sauce its luscious, coating consistency.
- Sliced Cherry Peppers: These are vital for the authentic Scarpariello kick. Cherry peppers offer a delightful balance of sweet and spicy. You can adjust the quantity based on your preferred heat level. Remember to remove the stems and seeds.
- Seasonings: Simple yet effective, you’ll need kosher salt, black pepper, and granulated garlic for seasoning the ribs, and dried oregano for the potatoes. Fresh minced flat-leaf Italian parsley is also essential for garnish and a burst of fresh flavor at the end.

How to Make Italian-Style Sticky Ribs with Crispy Potatoes: A Step-by-Step Guide
Creating these irresistible Italian-Style Sticky Ribs with Crispy Potatoes is a journey of simple steps leading to spectacular flavors. Each numbered instruction below corresponds to a specific action, ensuring you achieve perfectly tender ribs, golden potatoes, and that luscious, sticky sauce.
- Prepare the Ribs for Baking: Begin by patting your baby back ribs completely dry with paper towels. This helps achieve a better crust and ensures seasonings adhere properly. If the thin membrane on the underside of the ribs has not already been removed by your butcher, now is the time to do it. Gently loosen a corner of the membrane with a knife, then use a paper towel to get a firm grip and peel it off. This step is crucial for tender, fall-off-the-bone ribs. Season both sides of the ribs generously with kosher salt, freshly ground black pepper, and granulated garlic, rubbing the spices into the meat.
- Slow Roast for Tenderness: Carefully wrap the seasoned ribs tightly in aluminum foil. This traps moisture and allows the ribs to steam and become incredibly tender during the initial baking phase. Place the foil-wrapped ribs on a sturdy baking sheet and bake in a preheated 300°F (150°C) oven for 90 minutes. This low and slow cooking method is the secret to succulent ribs.

- Prepare and Season the Potatoes: While the ribs are baking, slice your Yukon Gold potatoes into uniform 1/4-inch rounds. For ease and consistency, a mandoline slicer works wonders (remember to use the safety guard!). Once sliced, pat the potato rounds thoroughly dry to remove any excess starch, which aids in crispiness. In a large bowl, toss the dried potato slices with a generous amount of olive oil, salt, freshly ground black pepper, and dried oregano until evenly coated. Arrange the seasoned potatoes in a single layer (with slight overlap is fine) on a baking sheet lined with parchment paper.
- Check Rib Tenderness and Slice: After 90 minutes, carefully remove the ribs from the oven. Unwrap them and gently test for tenderness. They should be almost fork-tender, meaning a fork slides in with minimal resistance but the meat still holds its shape. If they feel too firm, rewrap them in foil and return them to the oven for an additional 20-30 minutes, checking periodically. Once tender, remove the racks from the foil and carefully cut them into individual ribs. Pat any excess moisture from the cut ribs, then tent them loosely with foil to keep them warm while you prepare the potatoes and sauce.
- Achieve Crispy Potatoes: Increase your oven temperature to a hot 450°F (230°C). Place the baking sheet with the seasoned potato slices into the preheated oven and roast for 15 minutes. After this initial roasting time, use a spatula to flip each potato slice to ensure even browning and crispiness. Return them to the oven and continue roasting for another 15-20 minutes, or until they are beautifully golden brown and delightfully crispy.
- Begin the Sticky Sauce: While the potatoes finish roasting, heat a large, oven-safe, and broiler-safe pan (preferably a 14-inch stainless steel pan) over medium heat. Add the olive oil and sliced garlic cloves. Sauté the garlic for 1-2 minutes, stirring frequently, until it turns a light golden color and becomes fragrant. Be careful not to burn it, as burnt garlic can taste bitter. Next, sprinkle in the all-purpose flour and cook for another 1-2 minutes, stirring constantly, to create a roux that will thicken the sauce. The flour should toast slightly to a golden hue.

- Build and Reduce the Sauce: To the pan with the garlic and flour, add the sliced cherry peppers, red wine vinegar, dry white wine, and honey. Increase the heat to high and bring the mixture to a rolling boil. Allow it to boil vigorously, stirring occasionally, until the sauce visibly reduces in volume by about half and begins to thicken. This step concentrates the flavors beautifully. Then, pour in the low-sodium chicken stock, bring it back to a boil, and again reduce by half. The sauce should now be wonderfully sticky and have a consistency that coats the back of a spoon. Turn off the heat, taste the sauce, and adjust the seasoning with additional salt if necessary. Remember, the sauce should be a harmonious blend of sweet, tangy, and subtly spicy.
- Coat Ribs and Prepare for Broiling: Carefully add the pre-cooked individual rib pieces directly into the pan with the sticky sauce. Use tongs to toss the ribs thoroughly, ensuring each piece is generously coated in the rich, glossy sauce. Next, turn on your broiler and adjust the oven rack to the second-highest level, ensuring enough space between the ribs and the broiler element to prevent burning.
- Broil for Sticky Perfection: Place the pan with the sauce-coated ribs under the preheated broiler. Broil the ribs, turning them every minute or so with tongs, until they are beautifully browned and caramelized on all sides. This step creates that coveted sticky, slightly charred exterior. It’s crucial to watch them very carefully during this stage, as broilers can quickly go from perfection to burnt. Once uniformly browned and sticky, remove the pan from the oven.

- Assemble and Serve: On a large serving platter, artfully arrange the crispy roasted potatoes. Then, carefully place the glorious sticky ribs on top of the potatoes. Drizzle any remaining luscious sauce from the pan generously over both the ribs and potatoes, ensuring every component is imbued with its incredible flavor. Finish with a sprinkle of fresh, minced flat-leaf Italian parsley for a burst of color and herbaceous freshness. Serve immediately and prepare for rave reviews!
Top Tips for Perfect Italian Sticky Ribs and Crispy Potatoes
- Precision Potato Slicing: Achieving uniformly crispy potatoes is key, and a mandoline slicer makes this task incredibly easy and efficient. It ensures consistent thickness (aim for 1/4-inch or thinner) for even cooking. If you opt to use a mandoline, always prioritize safety by using the safety guard and following the manufacturer’s instructions. A sharp chef’s knife can also get the job done with careful, steady hands. Remember to pat the sliced potatoes dry to remove surface starch for maximum crispiness.
- Managing Heat Level from Cherry Peppers: Cherry peppers vary in their spice intensity. Before incorporating them into the sauce, it’s a good practice to taste a small piece to gauge its heat. If you prefer a milder dish, you can use fewer peppers or choose a milder variety. For those who love extra heat, feel free to add a pinch of red pepper flakes to the sauce. Adjusting the spice to your personal preference ensures everyone enjoys this delightful meal.
- Choosing the Right Pan is Crucial: I highly recommend using a large, heavy-duty 14-inch stainless steel pan for preparing the sauce and especially for broiling the ribs. A stainless steel pan offers excellent heat distribution and is safe to transfer from the stovetop directly to the oven/broiler, making cleanup easier and the process more seamless. If you don’t have a single pan large enough to accommodate both the sauce-making and broiling steps, you can prepare the sauce in a separate saucepan, then transfer the sauced ribs to a large, foil-lined baking sheet or roasting pan to place under the broiler. This ensures the ribs get that beautiful caramelization.
- Don’t Rush the Reduction: The sauce reduction steps are vital for developing deep flavor and a truly sticky texture. Don’t be tempted to skip or shorten these steps. Boiling the liquids until they reduce by half concentrates the sweetness, tanginess, and spice, creating the rich glaze that defines this dish.
- Broiler Vigilance: The broiler is powerful and can char food very quickly. Never leave the ribs unattended while broiling. Turn them frequently, every minute or so, to ensure even browning and to prevent burning. The goal is a beautiful, caramelized crust, not a scorched one.

Instructions
For the ribs
- Preheat oven to 300°F (150°C) and set the rack to the middle level.
- Dry off the ribs with paper towels. If the membrane has not already been removed, use a paper towel to grab and pull it off. Season the ribs generously with salt, pepper, and garlic powder on all sides. Wrap the ribs tightly in foil and place them on top of a foil-lined baking sheet.
- Bake for 90 minutes, then check for tenderness. The ribs should be almost fork-tender. If they are too hard, rewrap and return to the oven for another 20-30 minutes until tender.
- Remove the racks from the foil and carefully cut them into individual ribs. Pat dry to remove excess moisture. Tent the ribs loosely with foil and set aside.
For the potatoes
- Turn the oven heat up to 450°F (230°C).
- Slice the potatoes into 1/4-inch or thinner rounds. A mandoline works best for this step. Pat the potatoes dry and toss with olive oil, salt, pepper, and oregano. Arrange the potatoes on a parchment paper-lined baking sheet, allowing some overlap.
- Roast for 15 minutes, then turn the potatoes with a spatula. Return to the oven and roast for another 15-20 minutes or until the potatoes are crispy and golden.
For the sauce
- Heat a large broiler-safe pan to medium heat and add 1/4 cup olive oil along with the sliced garlic. Once the garlic turns lightly golden, add the flour and cook for 1-2 minutes or until golden, stirring constantly.
- Add the cherry peppers, red wine vinegar, white wine, and honey, and turn the heat to high. Boil vigorously until the sauce reduces in volume by half.
- Add the chicken stock, bring to a boil once more, and again reduce by half. The sauce should be sticky and coat the back of a wooden spoon. Turn the heat off. Taste the sauce and, if required, season with salt to taste.
- Add the ribs to the sauce and mix well to coat each piece thoroughly. Turn on the broiler and set the rack to the second-highest level. Broil the ribs, turning them every minute or so until they are browned and caramelized on all sides. Watch carefully to prevent burning. Remove from the oven.
- Place the crispy potatoes in a large platter and arrange the sticky ribs on top. Drizzle any remaining sauce onto the potatoes. Sprinkle generously with fresh parsley and serve immediately. Enjoy!
Notes
- Rib Selection: Either baby back or spare ribs can be used for this recipe. Spare ribs or St. Louis (trimmed spare ribs) are larger cuts and will typically require a bit longer to cook until tender.
- Pan Size: You will ideally need a large 14-inch stainless steel pan that can go from stovetop to broiler for the sauce and final broiling. If you don’t have a pan of this size, you can make the sauce in a separate pan, then transfer the sauced ribs to a large baking sheet or roasting pan before broiling.
- Spice Level Adjustment: Cherry peppers can vary in heat. Taste a small piece of your cherry peppers beforehand to determine their spice level. Adjust the quantity in the sauce to match your personal preference for heat.
- Leftovers & Reheating: Leftover Italian sticky ribs with crispy potatoes can be refrigerated in an airtight container for up to 3 days. To reheat, you can use the oven for best results (around 350°F or 175°C until warmed through) or a microwave for quicker reheating, though potatoes may lose some crispiness.
- Make Ahead: The ribs can be cooked and cut ahead of time, then stored in the refrigerator. The sauce can also be made in advance. Reheat both gently, then combine and broil just before serving.
