  1. Prepare the Cabbage: Begin by preheating your oven to 350°F (175°C) and positioning an oven rack in the middle. Remove any loose or damaged outer leaves from the cabbage head. Carefully core the cabbage, then bring a large pot of generously salted water to a rolling boil.
  2. Blanch the Cabbage: Gently place the whole cored cabbage head into the boiling water. Cook it, turning every few minutes, until the leaves become soft and pliable, which typically takes about 10 minutes. The goal is to make the leaves flexible enough to roll without breaking.

  1. Separate Cabbage Leaves: Once the cabbage is tender, carefully transfer it to a colander to drain. Allow it to cool slightly until it’s comfortable to handle. Gently separate about 16 intact leaves. If any leaves are still too firm to work with, return the cabbage head to the hot water for a few more minutes until softened.
  2. Sauté the Onions: Finely dice one large onion and mince about 1/4 cup of fresh flat-leaf Italian parsley. In a frying pan, melt 3 tablespoons of unsalted butter over medium heat. Add the diced onions along with a pinch of salt. Cook, stirring occasionally, until the onions are very soft and slightly caramelized, typically 12-15 minutes. This step adds a sweet depth to the filling.
  3. Prepare the Filling: Transfer the sautéed onions to a large mixing bowl. Add 1 cup of cooked long-grain rice, 1 pound of ground chuck, 1 pound of bulk Italian sausage, 1 teaspoon of dried oregano, 1 1/2 teaspoons of paprika, 1/2 teaspoon of black pepper, 2 teaspoons of fine sea salt, the minced parsley, and 1 large egg.   3. Roll and Arrange: Tightly roll the leaf upwards to enclose the filling completely. Repeat this process for all the remaining leaves. Place the finished rolls seam-side down in a 9×13-inch baking dish. You may need two baking dishes to comfortably fit all the rolls without overcrowding.
  4. Prepare the Braising Sauce: Heat 4 cups of water in a kettle or microwave until hot. In a separate bowl, combine the hot water with one 6-ounce can of tomato paste, 1 tablespoon of brown sugar, and 2 tablespoons of cider vinegar. Whisk well to combine. Taste the sauce and season with a touch of salt and pepper as needed.

During baking, if the liquid level appears low, add another 1/2 to 1 cup of hot water to prevent drying. You can test the tenderness by gently piercing a roll with a knife or fork.
  3. Achieve Desired Browning (Optional): For blonder, softer cabbage rolls, keep them covered for the entire baking duration. If you prefer a slightly darker, more caramelized finish (as pictured below), remove the foil during the final hour of baking. Uncovering will also help the sauce thicken a bit. Once tender, remove from the oven and let them rest for 15 minutes before serving.
  4. Thicken the Sauce (Optional): If you find the sauce too thin after baking, carefully transfer the cooked cabbage rolls to a serving platter. Pour the remaining sauce from the baking dish into a saucepan. Cook the sauce over medium-high heat, stirring occasionally, until it reduces and thickens to your desired consistency.

  • Cabbage Leaf Pliability: The key to easy rolling is having very pliable cabbage leaves. If, after boiling, the leaves are still too stiff, simply place them back into the boiling water for a few more minutes. Once the thick rib is removed, you can gently reshape the leaf into a more circular or tortilla-like form, which makes rolling and sealing much easier. Don’t worry about minor tears; smaller pieces of leaves can be used to “patch” any larger broken ones.
  • Dealing with Leftover Filling: It’s common to have a small amount of filling left over if you run out of suitable large leaves. Don’t waste it! You can combine smaller, less ideal leaves to create additional, albeit smaller, stuffed cabbage rolls. Alternatively, the leftover filling can be formed into small meatballs and baked alongside the rolls, or simply fried for a quick snack.
  • Sauce Management: Thickening the sauce at the end of the braising process is my preferred method as it creates a richer, more concentrated flavor and texture. However, this step is entirely optional. If you choose to thicken the sauce by reducing it, remember to salt it lightly at the beginning, as the flavors will intensify. If you skip the thickening step, adjust salt and pepper right before serving to taste.
  • Make-Ahead & Freezing: Stuffed cabbage rolls are an excellent make-ahead meal. They taste even better the next day! You can assemble the rolls and prepare the sauce, then refrigerate them unbaked for up to 2 days before baking. They also freeze beautifully after baking. Allow them to cool completely, then store them in an airtight container or freezer-safe bag with some sauce for up to 3 months. Thaw overnight in the refrigerator and reheat gently in the oven or microwave.

For the Cabbage Rolls

  • 1 large head of cabbage (cored but left whole)
  • 3 tablespoons (42g) unsalted butter
  • 1 large onion (finely diced)
  • 1 pound (454g) bulk Italian sausage
  • 1 pound (454g) ground chuck
  • 1 large egg
  • 1/4 cup minced flat-leaf Italian parsley
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons paprika
  • 1 cup (227g) cooked long grain rice
  • 1/2 teaspoon black pepper
  • 2 teaspoons fine sea salt

For the Sauce

  • 1 (6-ounce) can tomato paste
  • 4 cups (~1L) water
  • 1 tablespoon (13g) brown sugar
  • 2 tablespoons (30ml) cider vinegar
  • Salt and pepper to taste
  • 3 tablespoons (42g) unsalted butter (optional, for thickening)

Instructions

For the cabbage rolls

  1. Preheat oven to 350°F (175°C) and set the rack to the middle level.
  2. Bring a large pot of salted water to a boil. Once boiling, add the cored cabbage, turning it every few minutes. Cook until soft (about 10 minutes). Gently place the cabbage into a colander to drain. Once cool enough to handle, gently separate 16 leaves. If leaves are still too hard, add the cabbage back to the pot for a few more minutes.
  3. Heat a frying pan to medium heat with the butter and onions. Add a pinch of salt and cook until the onions are very soft and slightly caramelized (about 12-15 minutes).
  4. Add the cooked onions to a large bowl along with the cooked rice, bulk Italian sausage, ground chuck, oregano, paprika, black pepper, fine sea salt, minced parsley, and egg. Mix well to combine all ingredients.
  5. Place a blanched cabbage leaf onto a cutting board and flatten it out. With a paring knife, cut the thick rib out by making a slight V-cut approximately 1 to 2 inches down the leaf (refer to process photos above if needed). Repeat for the remaining leaves.
  6. Using a large scoop, add 1/3 cup (or about 65g) of filling into the center of the cabbage leaf. Fold the cut ends of the leaf over the filling, then tuck the sides in like a burrito. Roll the leaf tightly to close it up. Repeat for all remaining leaves.
  7. Place each rolled cabbage roll seam-side down into a 9×13-inch baking dish. Note: You might need two baking dishes to fit all the rolls without overcrowding.
  8. Heat 4 cups of water in a kettle or microwave until hot. In a separate bowl, combine the hot water with the tomato paste, brown sugar, and cider vinegar. Taste test and season with a touch of salt and pepper.
  9. Pour the prepared sauce into the baking dish until it mostly covers the rolls. If needed, add a little more hot water to ensure the rolls are submerged. Cover the dish tightly with aluminum foil.
