Ingredient Notes

Ingredients to make lemon pepper chicken tenders on a tiled background, including chicken tenderloins, butter, lemon juice, lemon pepper seasoning, and more.

Chicken Tenderloins

Chicken tenderloins are our top recommendation for speedy weeknight dinners. Their inherent tenderness ensures they cook quickly and remain incredibly juicy. Before cooking, it’s advisable to remove the small white tendon. This fibrous piece can be easily detached using kitchen shears or a small knife, ensuring a smoother texture in your final dish. For those unable to find tenderloins, boneless, skinless chicken breasts can be sliced into similar-sized strips, though cooking times may vary slightly.

Fresh Lemons

The essence of this dish lies in the vibrant flavor of fresh lemons. Fresh lemon zest forms the aromatic base of our homemade lemon pepper seasoning, while freshly squeezed lemon juice is the star of our tangy pan sauce. For an authentic and bright flavor that truly shines, we strongly advise against using bottled lemon juice or dried lemon zest, as they simply cannot replicate the complexity and brightness of fresh citrus. Consider using organic lemons if possible, especially when utilizing the zest.

Scallions (Green Onions)

While our lemon-pepper seasoning already contains onion powder for foundational flavor, finishing the dish with fresh scallions (also known as green onions) adds a delightful mild onion flavor, a refreshing crispness, and a pop of vibrant green color. They contribute a fresh, delicate bite that complements the rich sauce. If scallions are unavailable, or if you prefer a simpler presentation, it is perfectly fine to omit them.

Homemade Lemon Pepper Seasoning: The Secret to Superior Flavor

Unlike commercial lemon pepper blends that often contain anti-caking agents, excessive sodium, and artificial flavors, crafting your own seasoning blend ensures a purer, more intense flavor. The act of zesting the lemon just before mixing releases its potent essential oils, which infuse the dish with an unparalleled freshness. Black pepper, freshly ground, offers a sharp, aromatic kick that beautifully contrasts with the citrus. Garlic and onion powders provide an umami depth, rounding out the profile without overwhelming the delicate lemon notes. This simple, custom blend is a game-changer for your lemon pepper chicken tenders.

The Art of the Pan Sauce

A great pan sauce is the hallmark of sophisticated weeknight cooking, and this recipe delivers just that. After the chicken has been sautéed to a golden perfection, the remaining fond (the browned bits at the bottom of the pan) becomes the foundation of an exquisite sauce. By deglazing the pan with fresh lemon juice and chicken broth, you unlock all those caramelized flavors, transforming them into a light, zesty, and utterly delicious coating for your chicken. The butter added at the end helps to emulsify the sauce, giving it a rich, velvety texture and a beautiful sheen.

How to Make Lemon Pepper Chicken Tenders

Planning to make this recipe? Here’s a quick overview of how it’s done. Detailed, step-by-step instructions are in the printable recipe card below.

This dish stands out as a rapid and flavor-packed choice for any weeknight, coming together swiftly in under 30 minutes. The process begins with lightly floured chicken tenderloins, which are carefully sautéed until they achieve a beautiful golden-brown crust. Once perfectly seared, these succulent tenders are then generously seasoned with our aromatic homemade lemon-pepper seasoning blend.

The crucial secret to achieving flawlessly cooked chicken tenders with that coveted golden hue is to avoid overcrowding your pan. Giving each piece ample space allows for proper searing rather than steaming, resulting in a crisp exterior and tender interior. Just before serving, a handful of vibrant chopped scallions is stirred in, not only providing a delightful pop of color but also contributing a fresh, mild onion flavor that brightens the entire dish.

The grand finale involves a quick simmer in a tantalizing mix of fresh lemon juice and savory chicken broth. This step perfectly finishes the cooking of the chicken and artfully marries all the flavors, creating a light, tangy, and incredibly zesty sauce. This versatile sauce is perfect for spooning generously over accompaniments like fluffy rice, delicate orzo, creamy mashed potatoes, or even wholesome quinoa, making it a truly satisfying and complete meal.

Tested Tips for Culinary Success

Zesting and Juicing Lemons Like a Pro

To maximize the yield and flavor from your lemons, always zest them before you juice them. The skin is firmer when whole, making it easier to extract the fragrant zest. For optimal juicing, bring your lemons to room temperature; this softens the membranes and releases more juice. A quick trick is to microwave them for about 10 seconds. Before cutting, roll the lemon firmly on your counter with the palm of your hand. This action helps to break down the internal membranes, allowing for a significantly greater output of juice. These simple steps ensure you get the most out of your fresh citrus.

Reheating Leftovers Gracefully

Should you have any delectable leftovers, reheat them gently to preserve their tenderness and flavor. The stove-top, over low heat, or the microwave on a medium setting are ideal. To prevent the chicken from drying out and to reconstitute the sauce to its original glory, add a small splash of chicken broth or water before reheating. Stir occasionally until warmed through, ensuring a delightful meal even the second time around.

Ingredients

  • 1-1/4 to 1-1/2 lbs chicken tenderloins, about 12 pieces

  • 1/2 cup flour

  • 1-1/2 teaspoons kosher salt, divided

  • 4 teaspoons fresh lemon zest, (from 2 lemons)

  • 1 teaspoon freshly ground black pepper

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 3 tablespoons olive oil

  • 1 tablespoon butter

  • 6 tablespoons freshly squeezed lemon juice, (from 2 lemons)

  • 1 cup low-sodium chicken broth

  • 4 scallions, sliced

Instructions

  1. Trim any visible white tendons from the chicken tenderloins. In a large zip-top plastic bag, combine the flour and 1 teaspoon of the kosher salt. Add the chicken, seal the bag, and shake until the tenderloins are evenly coated. Set aside.
  2. In a small bowl, mix the lemon zest, black pepper, garlic powder, onion powder, and the remaining 1/2 teaspoon of salt. This creates your homemade lemon pepper seasoning. Set aside.
  3. Heat the olive oil and butter in a large skillet over medium-high heat. Once the butter is melted and slightly foamy, shake off any excess flour from the tenderloins and carefully place them in the pan in a single layer. Sauté for about 1-1/2 minutes per side, until golden brown and cooked through.

Note: To ensure proper browning and avoid steaming, it is crucial not to overcrowd the pan. If all the tenders do not fit comfortably in a single layer, it is highly recommended to sauté them in two separate batches.

  4. Once the chicken is seared, reduce the heat to medium. Add the freshly squeezed lemon juice and chicken broth to the pan, scraping up any browned bits from the bottom (this is called deglazing and adds immense flavor to your sauce). Then, sprinkle the homemade lemon-pepper seasoning evenly over the chicken. Use tongs to gently turn the tenderloins a few times, ensuring they are thoroughly coated with the developing pan sauce.
  5. Allow the chicken to simmer in the sauce for about 1-1/2 minutes. Turn the pieces over once more, then add the sliced scallions to the pan. Continue cooking for another 1-1/2 to 2 minutes, or until the chicken is completely cooked through (internal temperature reaches 165°F / 74°C) and the sauce has thickened slightly to your desired consistency.
  6. Remove the skillet from the heat immediately. Arrange the chicken tenders on serving plates, generously spoon the flavorful lemon pan sauce over the top, and serve hot. Garnish with additional fresh lemon slices or chopped scallions if desired.
