Why Pepperoni Pinwheels are a New York Favorite

Walk into virtually any New York-style pizzeria, and you’ll find a dazzling display of baked goods beyond the standard pizza slice. Glass counters overflow with a variety of irresistible options: savory sausage bread, plump calzones, hearty stromboli, and a vibrant assortment of pizza slices piled high with every topping imaginable. Amidst this delicious spread, the pepperoni pinwheel holds a special place in the hearts of New Yorkers.

For many, including myself, the pepperoni pinwheel is an almost irresistible impulse buy. There’s something inherently appealing about its cinnamon bun-like swirl, a visual promise of the delicious layers within. The combination of tender pizza dough, tangy marinara, salty ham, spicy pepperoni, and gooey mozzarella creates a symphony of flavors and textures that is truly unique. It’s the perfect grab-and-go snack, an ideal appetizer, or a delightful addition to any meal. A quick stop for a pizza pie often turns into a spontaneous order of “a couple of pinwheels and some garlic knots,” leading to pure satisfaction on the drive home.

Making these classic New York pepperoni pinwheels at home allows you to control the quality of ingredients and customize them to your exact preferences. It’s a rewarding culinary project that brings the authentic taste of a bustling New York pizzeria right into your own kitchen, perfect for entertaining or simply enjoying a beloved comfort food.

Essential Ingredients for Authentic Pinwheels

Crafting the perfect pepperoni pinwheels begins with selecting the right ingredients. Here’s a closer look at what you’ll need and why each component is crucial for that authentic New York taste. Most key ingredients are pictured below for reference.

Ingredients for pepperoni pinwheels: cutting board with ham, mozzarella, pepperoni, and a bowl with pizza dough.

The Dough: Foundation of Flavor

  • Pizza Dough: The backbone of your pinwheels! You can use our highly recommended homemade New York-style pizza dough for the freshest, most authentic flavor and texture. Alternatively, high-quality store-bought pizza dough can be a convenient time-saver. Whichever you choose, ensure it’s brought to room temperature before stretching; this makes it pliable and easy to work with, preventing tears and ensuring a uniform roll. A 24-ounce dough ball is ideal for this recipe, yielding about 10-12 pinwheels.

Crafting the Authentic Marinara Sauce

  • Marinara Sauce: While you can use a good quality store-bought marinara, making a simple homemade sauce elevates these pinwheels significantly. Our recipe focuses on fresh garlic, a hint of red pepper flakes for warmth, and quality crushed plum tomatoes. The secret ingredient for that unmistakable New York pizzeria taste is often Sicilian oregano, which offers a robust, earthy flavor that sets it apart. The sauce should be simmered briefly and then cooled completely before spreading onto the dough to prevent it from making the dough soggy or cooking the fillings prematurely.

Premium Fillings: Meats and Cheeses

  • Cold Cuts: For the best results, ask your supermarket or local deli to thinly slice the ham, pepperoni, and mozzarella cheese. Thin slices ensure even distribution and a more balanced flavor in each pinwheel. If a deli slicer isn’t an option, pre-sliced packaged cold cuts will also work.
    • Pepperoni: Choose a good quality slicing pepperoni. Some varieties “cup” and crisp up when baked, adding a delightful texture.
    • Ham: A classic deli ham, such as Boar’s Head deluxe deli ham, provides a wonderful savory contrast.
  • Mozzarella Cheese: Low-moisture, part-skim mozzarella is ideal for its melting properties and lower water content, which prevents a soggy dough. About 15 slices or enough to cover the dough adequately is perfect.
  • Pecorino Romano: If you’re serious about capturing that authentic New York flavor, do not skip the Pecorino Romano. This salty, pungent sheep’s milk cheese is a staple in many Roman pastas like cacio e pepe and carbonara, and it’s the secret ingredient that New York pizzerias use to add a distinct salty, umami depth to their baked goods. A final sprinkle before baking creates an amazing crust and flavor profile.
  • Semolina Flour: A dusting of semolina on your baking sheet prevents sticking and contributes to a crispy bottom crust. Regular flour can be used as a substitute if semolina is unavailable.

Step-by-Step: How to Make Pepperoni Pinwheels From Scratch

Making homemade pepperoni pinwheels is a fun and straightforward process that yields incredibly delicious results. Follow these detailed steps to create your own New York pizzeria-style delights.

Note: Proper dough preparation is crucial. Whether homemade or store-bought, your pizza dough needs to be removed from the refrigerator and allowed to warm up for 1-3 hours before you attempt to stretch or roll it. In colder months, it might take closer to 3 hours, while in warmer weather, 1-2 hours should suffice. This makes the dough pliable and easy to work with.

Part 1: Preparing the Marinara Sauce

  1. Sauté the Garlic: In a medium saucepot, combine 1/4 cup of olive oil with 5 cloves of thinly sliced garlic. Cook over medium-low heat, stirring occasionally, until the garlic turns a beautiful golden color, about 2-3 minutes. This infuses the oil with a rich garlic flavor.
  2. Add Red Pepper Flakes: Stir in 1/4 teaspoon of hot red pepper flakes and continue to cook for another 30 seconds. This step adds a subtle kick to the sauce, characteristic of many pizzeria marinara recipes.
  3. Incorporate Tomatoes and Simmer: Pour in one 28-ounce can of crushed plum tomatoes. Bring the sauce to a gentle simmer, then reduce the heat and let it continue to simmer for 5-7 minutes. This allows the flavors to meld beautifully.
  4. Season and Cool: Season the sauce with 1 teaspoon of dried Sicilian oregano (for that authentic NY taste) and salt and pepper to your preference. Once seasoned, remove the sauce from the heat and set it aside to cool completely. For faster cooling, transfer about 3/4 cup of the sauce to a bowl and place it in the freezer for 10-15 minutes. It’s essential that the sauce is cool before you spread it on the dough to prevent the dough from getting soggy.

Part 2: Assembling and Baking the Pinwheels

  1. Prepare Dough and Oven: Ensure your pizza dough has thoroughly warmed up (at least 3 hours out of the fridge) for optimal stretching. Preheat your oven to 425°F (218°C) and position an oven rack to the middle level. Lightly flour a clean work surface.
  2. Stretch the Dough: On the floured surface, gently stretch or roll the pizza dough into a rectangular shape, aiming for approximately 14 by 18 inches. Try to keep the thickness as even as possible for uniform baking.
  3. Apply Sauce: Spread a thin, even layer of the cooled marinara sauce over the entire dough rectangle, leaving a 1-inch border uncovered along both of the longer edges (top and bottom when oriented vertically). This border will help seal the pinwheel later.
Recipe collage three showing spreading out sauce onto pizza dough and layering the ham on top.
  1. Layer the Ham: Arrange about 15 slices of deli ham over the sauce, following the same pattern and leaving a 1-inch border on the longer edges. Approximately 1/2 pound of ham should be sufficient, depending on how thinly it was sliced.
  2. Add Mozzarella and Pepperoni: Next, layer about 15 slices of mozzarella cheese evenly over the ham. Follow this with approximately 40 slices of pepperoni, ensuring good coverage over the entire area, still minding the 1-inch borders. The goal is complete coverage rather than exact weight.
  3. Roll and Seal the Dough: Starting from one of the longer, sauced edges, begin to tightly roll the dough into a cylinder. Roll it as snugly as possible to ensure compact pinwheels. Once rolled, lightly moisten the final edge with a little water and press firmly to seal the seam, creating a secure log.
Recipe collage four showing rolling the pinwheel and cutting the roll into pieces.
  1. Slice the Pinwheels: Carefully transfer the rolled dough log to a cutting board. Using a very sharp knife (a thin blade works best), slice the log into 1 to 1 1/4-inch thick pinwheels. If you find the log too soft or difficult to slice cleanly, you can place it in the freezer for about 15-20 minutes to firm it up slightly, which makes cutting much easier.
  2. Prepare for Baking: You should end up with approximately 10-12 pepperoni pinwheels, depending on their thickness. Line a large baking sheet with parchment paper and lightly dust it with semolina flour or regular flour. Arrange the pinwheels on the prepared baking sheet, leaving at least 1 inch of space between each one to allow for even baking and expansion. If needed, use a second baking sheet to avoid overcrowding.
  3. Bake to Golden Perfection: Distribute 1/4 cup of grated Pecorino Romano cheese evenly among the pinwheels (about 1-2 teaspoons per pinwheel). This will create a wonderfully savory, crispy crust. Bake for 18-20 minutes, or until the pinwheels are golden brown and bubbly, with the cheese melted and lightly caramelized.

  1. Serve and Enjoy: Once baked, remove the pepperoni pinwheels from the oven. Let them cool slightly before serving. They are absolutely perfect served warm with the remaining marinara sauce on the side for dipping. Enjoy your homemade taste of New York!

Pro Tips for Perfect Pizza Pinwheels

  • Allow Dough to Warm: This cannot be stressed enough. Cold dough is stiff and difficult to stretch without tearing. Taking your pizza dough out of the refrigerator a few hours beforehand is paramount for a smooth, even roll and easy handling.
  • Cool the Marinara: A common mistake is spreading hot sauce on cold dough. This makes the dough sticky, difficult to roll, and can lead to a soggy final product. Always ensure your marinara is completely cooled before assembling the pinwheels.
  • Use Quality Ingredients: The flavor of your pinwheels is directly tied to the quality of your ingredients. Good crushed tomatoes for the sauce, flavorful deli meats, and fresh mozzarella make a significant difference.
  • Customize Your Fillings: While pepperoni and ham are classic, don’t hesitate to experiment! Salami, soppressata, capicola, or even prosciutto can be fantastic additions or substitutions. For cheeses, try a mix of mozzarella and provolone, or add a touch of sharp cheddar for extra tang. Ensure any additional fillings are thinly sliced to roll easily.
  • Sharp Knife for Clean Cuts: A very sharp knife is your best friend when slicing the rolled dough log. This helps prevent squishing the pinwheels and ensures clean, attractive spirals. If your knife isn’t sharp enough, or the dough is too soft, the freezer trick (freezing the log for 15-20 minutes) works wonders.
  • Don’t Overcrowd the Baking Sheet: Give your pinwheels room to breathe and bake evenly. Overcrowding can lead to steaming instead of baking, resulting in a less crispy exterior. Use two baking sheets if necessary.

Serving and Storage Suggestions

Pepperoni pinwheels are incredibly versatile and perfect for a variety of occasions:

  • Appetizer: Serve them as a delicious starter for parties, game nights, or family gatherings.
  • Snack: They make a satisfying and flavorful snack any time of day.
  • Light Meal: Pair them with a fresh green salad for a quick and easy lunch or dinner.
  • Dipping Sauce: Always serve with extra warm marinara sauce on the side for dipping. A sprinkle of fresh basil or parsley before serving adds a touch of freshness.

Storage and Reheating

  • Storing Leftovers: Any leftover pepperoni pinwheels can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheating: For best results, reheat pinwheels in the oven at 350°F (175°C) for about 10-15 minutes, or until they are heated through and the crust has re-crisped. Reheating in a toaster oven also works well for individual portions. Microwaving is an option, but it may result in a softer crust.
  • Freezing: You can also freeze baked pinwheels. Allow them to cool completely, then place them in a single layer on a baking sheet to flash freeze. Once frozen solid, transfer them to a freezer-safe bag or container. They can be stored for up to 1 month. Reheat from frozen in a 350°F (175°C) oven until hot and bubbly.

Frequently Asked Questions About Pepperoni Pinwheels

Can I use different types of pizza dough?

Yes, absolutely! While a traditional New York-style pizza dough is recommended for authenticity, you can use any pizza dough you prefer. Thin crust, whole wheat, or even gluten-free pizza dough can be adapted for this recipe. Just be mindful of their unique handling characteristics and adjust baking times if necessary.

What other fillings can I use for pinwheels?

The possibilities are endless! Besides ham and pepperoni, consider Italian sausage, cooked ground beef, shredded chicken, or even vegetarian options like sautéed mushrooms, spinach, roasted bell peppers, or olives. Provolone is a great substitute or addition to mozzarella. Experiment with different combinations to find your favorite!

How do I prevent my pinwheels from unrolling while baking?

Ensuring a tight roll and a secure seal with a little water along the seam of the dough is crucial. Also, placing the pinwheels seam-side down on the baking sheet helps keep them intact during baking. If they still seem prone to unrolling, chilling the log briefly before slicing can help them hold their shape better.

Can I prepare these pinwheels ahead of time?

Yes, you can prepare the pinwheels up to the point of baking. Once sliced and arranged on the baking sheet, cover them tightly with plastic wrap and refrigerate for up to 24 hours. Remove them from the fridge about 30 minutes before baking to allow them to come closer to room temperature, then bake as directed.

The classic pizzeria-style pepperoni pinwheel is made with pizza dough rolled with ham, pepperoni, mozzarella, and marinara and baked until golden and bubbly. Served with more marinara for dipping.

Ingredients

Marinara sauce

  • 1/4 cup olive oil
  • 5 cloves garlic, sliced
  • 1/4 teaspoon crushed hot red pepper flakes
  • 1 28-ounce can crushed plum tomatoes
  • 1 teaspoon Sicilian oregano
  • salt and pepper, to taste

For the pepperoni pinwheel

  • 1 24-ounce pizza dough ball (homemade or store-bought)
  • 3/4 cup marinara sauce (from above)
  • 15 slices mozzarella cheese (or enough to cover the dough)
  • 40 slices slicing pepperoni (or enough to cover the dough)
  • 15 slices deli ham (or enough to cover the dough)
  • 1/4 cup Pecorino Romano, grated
  • 1 tablespoon semolina, for dusting

Instructions

For the sauce

  1. In a saucepot, sauté the garlic in olive oil over medium-low heat until golden (about 2-3 minutes).
  2. Add the hot red pepper flakes and cook for 30 seconds more. Add the plum tomatoes and bring the sauce to a simmer. Simmer for 5-7 minutes, then season with oregano, salt, and pepper to taste.
  3. Set the sauce aside to cool. To work faster, take 3/4 cup of the sauce, place it into a bowl, and freeze for 10-15 minutes to cool it down more quickly. The sauce shouldn’t be hot when assembling the pinwheels below.

For the pepperoni pinwheels

  1. Ensure you start with warmed-up pizza dough (at least 3 hours out of the fridge) for easy stretching. Preheat your oven to 425°F (218°C) and set the rack to the middle level.
  2. On a floured work surface, stretch or roll the pizza dough into a rectangle shape (approximately 14 by 18 inches).
  3. Spread the cooled sauce all over the dough, leaving a 1-inch border on the top and bottom long edges uncovered. Spread the pepperoni, mozzarella, and ham evenly, again leaving the 1-inch top and bottom borders uncovered.
  4. Roll the pinwheel into a tight log, sealing the final edge with a bit of water and pressing firmly.
  5. With a very sharp knife, cut the log into 1 to 1 1/4-inch wide pinwheels. Place parchment paper on a large baking sheet and spread a thin layer of semolina all over it.
  6. Place the pinwheels onto the sheet, leaving at least 1 inch between each one. If necessary, use 2 sheets to avoid crowding.
  7. Sprinkle the Pecorino Romano onto each pinwheel and bake for 18-20 minutes or until golden brown and bubbly. Serve with the remaining marinara. Enjoy!

Notes

  • Any pizza dough can be used. For this recipe, we used 24 ounces of our standard pizza dough.
  • Use your own already-made marinara or a good quality store-bought sauce to skip the sauce preparation step.
  • Provolone is a great substitute or addition to the mozzarella. The same goes for salami, soppressata, or other cold cuts for the pepperoni or ham.
  • Leftovers can be saved for up to 3 days in the refrigerator and should be reheated in the oven at 350°F (175°C) until hot.
