- 6 ounces bacon, chopped
- 1 large yellow onion, finely diced
- 1 medium head cabbage, chopped (yields approximately 8-10 cups)

- 3 cups low-sodium chicken stock, divided (homemade recommended)
- 3/4 cup grated Parmigiano Reggiano, plus more for serving
