- 1 teaspoon dried thyme
- 1 1/2 cups (360ml) low-sodium chicken stock
- salt and pepper to taste
- 3/4 cup (110g) feta cheese plus more for serving
- 2 teaspoons lemon zest
- 1/4 cup minced flat-leaf Italian parsley

- Prepare Beans (if dried): Place presoaked dried beans in a large pot, fill with water, bring to a boil, then simmer until almost tender. Drain and set aside. Skip if using canned beans.
