Ingredients
- 4 to 5 ripe tomatoes, about 2 lbs
- 3 medium eggplant, 2-1/2 to 2-3/4 lbs total
- 4 to 5 medium zucchini, 2 lbs total
- Salt and freshly ground black pepper
- 4 tablespoons olive oil, divided
- 8 ounces crimini or white button mushrooms
- 1 medium red bell pepper, cut into 1/2-inch cubes
- 1 cup onion, chopped
- 4 cloves garlic, finely chopped
- 8 ounces fresh mozzarella cheese, divided
- 1-3/4 cups ricotta cheese, 15-ounce container
- 2 eggs, lightly beaten
- 1-1/4 cups finely shredded Asiago cheese, divided
- 2 tablespoons fresh parsley, finely chopped, divided
- 1 cup tomato sauce
- 20 no-cook lasagna noodles, 6-1/2 x 3-1/2-inch
Instructions
- Preheat the oven to 500°F. Line two shallow baking pans with foil and coat with nonstick spray.
- Peel the tomatoes: Cut a small, thin slice from the bottom of each tomato, then cut them in half lengthwise and remove the core. Arrange cut side down on one of the prepared pans and, using the tip of a sharp knife, score the skin of each tomato lengthwise. Place them in the oven for 4 to 5 minutes. You’ll know when the tomatoes are ready to be peeled when you see the gap where you scored the skin widen slightly. Remove from oven and reduce the oven temperature to 450°F. As soon as the tomatoes are cool enough to touch, peel them and remove the seeds. Chop into 1-inch pieces, transfer to a bowl, and set aside.
- Pre-cook the eggplant: Trim the ends from each eggplant, peel, and cut lengthwise into 1/4-inch thick slices. If necessary, replace the foil on the pan you used for the tomatoes, or simply wipe off and re-coat with nonstick spray. Arrange the eggplant slices on the prepared pans, season lightly with salt and pepper, and roast until tender, 12 to 15 minutes. Transfer the eggplant to a platter and set aside.
- Pre-cook the zucchini: Trim the ends from the zucchini and cut them lengthwise into 1/4-inch thick slices. Re-coat the baking pans with nonstick spray, arrange the zucchini in a single layer, and season lightly with salt and pepper. Roast until tender, 10 to 12 minutes. Transfer the zucchini to a platter and set aside. Reduce the oven temperature to 375°F.
- Pre-cook the mushrooms and peppers: Place 2 tablespoons of the olive oil in a heavy skillet over medium-high heat. Add the mushrooms and sauté until they begin giving off liquid. Continue cooking for another minute, then add the red bell pepper and season the mixture with salt and pepper. Continue cooking until all the liquid has evaporated, the mushrooms are lightly browned, and the peppers are tender. Transfer to a small bowl and set aside.
- Prepare the fresh tomato sauce: Add the remaining 2 tablespoons of olive oil to the pan and add the onion. Sauté, stirring often, until the onion is soft and translucent, 4 to 5 minutes. Add the garlic and continue cooking just until fragrant, about 30 seconds longer. Stir in the chopped tomatoes, lower the heat to medium, and cook for 5 minutes. Season to taste with salt and pepper and continue cooking for another 15 minutes, allowing the flavors to meld beautifully.
- Prepare the cheese filling: Divide the fresh mozzarella in half. Cut one half into small (1/2-inch) cubes. Cut the other half into thin slices, then quarter each slice and set aside – these will be used for the top layer. Combine the ricotta, beaten eggs, and 1 cup of the shredded Asiago in a mixing bowl. Season with a little salt and pepper, then stir in the mozzarella cubes and finely chopped fresh parsley. Mix well until all ingredients are evenly distributed. Set aside.
- Assemble the lasagna: Coat a 13 x 9-inch lasagna pan with nonstick spray. Pour in the tomato sauce (1 cup) and tilt the pan to cover the bottom evenly. Spread four no-cook lasagna noodles across the pan, overlapping them on the long side by about 1/8-inch. Layer all the pre-cooked eggplant slices on top of the noodles. Spoon about 1/3 of the fresh homemade tomato sauce (from step 6) over the eggplant. Add another layer of noodles. Spread half of the prepared ricotta mixture evenly over these noodles. Top with a third layer of noodles.
- Arrange the pre-cooked zucchini slices over this noodle layer. Spoon another 1/3 of the fresh tomato sauce over them. Top with four more noodles. Spread the remaining ricotta mixture over these noodles, ensuring even coverage. Finally, add a last layer of noodles to complete the structure. Stir the pre-cooked mushrooms and bell peppers into the remaining fresh tomato sauce and spread this mixture evenly over the very top layer of the lasagna.
- Bake the lasagna: Coat a piece of heavy-duty foil with nonstick spray and use it to tightly cover the lasagna pan. Bake in the preheated 375°F oven for 1 hour. After 1 hour, carefully remove the lasagna from the oven and uncover it. Distribute the reserved thin slices of fresh mozzarella and the remaining Asiago cheese evenly over the top. Return the lasagna to the oven, uncovered, and bake for an additional 15 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
- Allow the lasagna to stand for at least 10 minutes (preferably 15-20 minutes) before cutting and serving. This resting period allows the layers to set, making it easier to slice and ensuring a beautiful presentation.

Tips for the Perfect Vegetable Lasagna
Crafting a memorable vegetable lasagna goes beyond just following the steps. Here are some expert tips to elevate your dish:
- Don’t Skip Pre-cooking the Vegetables: This is a crucial step often overlooked. Roasting or sautéing vegetables like eggplant, zucchini, and mushrooms beforehand not only deepens their flavor but also removes excess moisture. This prevents your lasagna from becoming watery and ensures a firm, well-structured dish.
- Quality Ingredients Matter: Since vegetables are the stars of this dish, choose the freshest, ripest produce you can find. Local, seasonal ingredients will always yield the best flavor. Similarly, opt for high-quality cheeses for a superior creamy texture and taste.
- Season Every Layer: Don’t forget to season your vegetables with salt and pepper as you pre-cook them. Also, taste and adjust the seasoning of your homemade tomato sauce and cheese filling. Layered seasoning builds depth of flavor throughout the entire dish.
- No-Cook Noodles are a Game Changer: Using no-cook lasagna noodles saves a significant amount of time and effort. They absorb moisture from the sauce and cheese as the lasagna bakes, resulting in perfectly tender pasta without the extra step of boiling.
- Allow for Resting Time: Just like a perfectly roasted turkey, lasagna benefits greatly from resting after it comes out of the oven. This allows the cheeses and sauces to set, preventing the layers from sliding apart when you cut into it. A 10-20 minute rest makes all the difference for clean, impressive slices.
- Make-Ahead Magic: Vegetable lasagna is an ideal dish for meal prepping. You can assemble the entire lasagna a day or two in advance, cover it tightly, and refrigerate. When ready to bake, add an extra 10-15 minutes to the covered baking time to account for it being cold from the fridge.
Serving Suggestions for Your Delicious Lasagna
This hearty vegetable lasagna can stand proudly as a meal on its own, but pairing it with the right accompaniments can elevate the dining experience:
- Fresh Green Salad: A light, crisp green salad with a simple vinaigrette dressing provides a refreshing contrast to the richness of the lasagna.
- Garlic Bread or Crusty Ciabatta: Perfect for soaking up any leftover sauce, a warm slice of garlic bread or a crusty loaf is a classic accompaniment to any pasta dish.
- Steamed Green Beans or Asparagus: For an extra dose of greens, lightly steamed vegetables offer a simple and healthy side.
- A Glass of Wine: A medium-bodied red wine like Chianti or a crisp white wine such as Pinot Grigio can beautifully complement the flavors of the lasagna.
Creative Variations to Explore
Once you’ve mastered the classic vegetable lasagna, don’t hesitate to experiment with variations to suit your taste or what’s available:
- Spinach and Artichoke: Add a layer of sautéed spinach and chopped artichoke hearts to the cheese filling for a delightful twist.
- Spicy Kick: Incorporate a pinch of red pepper flakes into your tomato sauce or cheese mixture for a subtle heat.
- Different Cheeses: Experiment with other cheese combinations. Provolone, fontina, or even a smoked mozzarella can add unique flavor dimensions. For a richer flavor, consider mixing some grated Parmesan or Pecorino Romano into the ricotta mixture.
- Seasonal Vegetables: In the fall, try adding roasted butternut squash or sweet potato. In the spring, fresh peas and asparagus can be wonderful.
- Gluten-Free Option: Easily adapt this recipe by using gluten-free lasagna noodles and ensuring all other ingredients are certified gluten-free.
- Vegan Adaptation: For a completely plant-based version, replace dairy cheeses with vegan ricotta, mozzarella, and Parmesan alternatives.
