How to make hearty chicken stew with potatoes, carrots, and peas

The following numbered steps outline the full method, from browning the meat to finishing the stew.

  1. Preheat the oven to 325°F and clear room on the middle rack for a large Dutch oven with a lid. Pat the chicken dry and season all over with salt and pepper.
  2. Heat a large Dutch oven over medium heat and add oil. When shimmering, sear the chicken in batches so the pot isn’t overcrowded, browning both sides. Transfer the browned pieces to a plate and tent with foil to keep warm.
  3. Reduce heat to medium-low and add butter, chopped onion and diced celery with a pinch of salt. Sauté until vegetables are soft and translucent, about 10 minutes. Add minced garlic and cook another 1–2 minutes until fragrant.
  4. Sprinkle in the flour and cook for about one minute, stirring so the flour loses its raw, white appearance and begins to blend with the vegetables.
  5. Pour in the white wine and turn the heat to high. Use a wooden spoon to scrape up any browned bits from the bottom of the pot, then let the liquid boil briefly for about 20 seconds.
  6. Whisk in the chicken stock, return the seared chicken to the pot, and bring the mixture to a boil.
  7. Add the carrots, potatoes, thyme sprigs, bay leaves and Worcestershire sauce. Stir to combine and bring the stew back to a boil.
  8. Once boiling, turn off the stovetop heat, cover the pot with the lid, and transfer the Dutch oven to the preheated oven. Cook for 45 minutes.
  9. After 45 minutes, remove the lid and continue cooking in the oven for another 30–60 minutes, until the potatoes and carrots are tender. About 15 minutes before the stew is done, stir in the frozen peas.
  10. When finished, remove thyme sprigs and bay leaves, skim any excess fat from the surface, and taste for seasoning; adjust with salt and pepper as needed. To thicken, either simmer uncovered on the stovetop to reduce the liquid for 5–10 minutes or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) over medium heat until the stew thickens, about one minute. Ingredients 

  • 3 tablespoons olive oil
  • 3 pounds boneless skinless chicken thighs cut in half
  • 3 tablespoons unsalted butter
  • 1 large onion chopped
  • 2 large celery ribs diced
  • 4 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 1 cup dry white wine
  • 3 cups low sodium chicken stock
  • 2 teaspoons Worcestershire sauce
  • 4 sprigs thyme
  • 2 large bay leaves
  • 1 pound carrots peeled and cut into 1-inch chunks
  • 1 1/4 pound Yukon Gold potatoes cut into 1-inch pieces
  • 1 cup frozen peas
  • salt and pepper to taste

For cornstarch slurry (optional)

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  • Discard thyme sprigs and bay leaves, skim excess fat, and season to taste with salt and pepper. To thicken, reduce on the stovetop or stir in the cornstarch slurry until desired consistency is reached. Serve hot with crusty bread.

Notes

  • Not thick enough. To thicken, place the pot over medium heat and whisk in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons water. Simmer until thickened. If too thick, thin with extra chicken stock or water.
  • Stovetop option. You can cook the stew entirely on the stovetop over medium-low; check periodically to prevent sticking. Oven cooking reduces the need to monitor the pot and promotes even braising.
  • Herbs. Substitute or add fresh sage or rosemary to vary the flavor.
  • Storage. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently on the stovetop over medium-low heat or in the microwave until heated through.
