Key Ingredients for Your Lemon Garlic Scallop Pasta
Crafting this incredible scallop pasta begins with selecting the freshest, highest-quality ingredients. Each component plays a vital role in building the layered flavors of the dish. Below is a visual guide to the main ingredients, followed by special notes to ensure your success in the kitchen.

- Scallops: For this recipe, we recommend using large sea scallops, known for their plump texture and sweet flavor. However, if bay scallops are more accessible, they can certainly be used; just be mindful that their smaller size will necessitate a shorter cooking time. Whether fresh or frozen, ensuring your scallops are completely thawed and thoroughly patted dry with paper towels is paramount for achieving that perfect golden sear.
- Capers: These briny, tangy buds add a wonderful depth of flavor and a burst of salinity to the sauce, perfectly complementing the sweetness of the scallops. Capers are naturally quite salty, so it’s crucial to rinse them thoroughly under cool water before adding them to your sauce to prevent the dish from becoming overly seasoned.
- Stock: Low-sodium chicken stock forms the base of our luscious lemon-garlic sauce, offering a neutral yet savory foundation. For an even richer seafood flavor, feel free to substitute with seafood stock if you have it on hand. The low-sodium option allows for better control over the final seasoning of your pasta.
- Dry White Wine: A dry white wine, such as Pinot Grigio or Sauvignon Blanc, is essential for deglazing the pan and adding a layer of complex acidity and fruitiness to the sauce. It helps to lift the browned bits from the pan, infusing the sauce with concentrated flavor.
- Fresh Lemons: The star of the “lemon” in Lemon Garlic Scallop Pasta! Freshly squeezed lemon juice and thin lemon slices are critical for that bright, zesty finish that cuts through the richness of the seafood and pasta. Always opt for fresh lemons for the best flavor.
- Garlic and Shallots: These aromatic staples create the flavorful foundation of the sauce. Shallots offer a milder, sweeter onion flavor than traditional onions, while plenty of fresh garlic provides that irresistible pungent depth.
- Pasta: Linguine or spaghetti are excellent choices for this dish, as their long, thin strands are perfect for catching the light lemon-garlic sauce and small pieces of caper. Cook your pasta to just shy of al dente, as it will finish cooking in the sauce, absorbing its delicious flavors.
- Butter and Olive Oil: A combination of neutral oil for searing the scallops, extra virgin olive oil for the sauce, and cold unsalted butter at the end creates richness, silkiness, and emulsifies the sauce beautifully.
- Fresh Parsley: Minced flat-leaf Italian parsley adds a burst of freshness and vibrant green color as a finishing touch, enhancing the overall appeal and taste.
- Red Pepper Flakes: A touch of crushed red pepper flakes introduces a subtle warmth and a hint of spice, elevating the flavor profile without overpowering the delicate scallops.

Step-by-Step Guide to Crafting Lemon Garlic Scallop Pasta
Follow these detailed steps to create a restaurant-quality Lemon Garlic Scallop Pasta in your own kitchen. Each instruction is designed to guide you through the process, ensuring a perfectly cooked dish every time. The images below illustrate key stages of preparation and cooking.
- Prepare Your Ingredients: Begin by prepping all your components. Rinse 3 tablespoons of capers thoroughly, finely mince 1 large shallot, thinly slice 6 cloves of garlic, slice 2 large lemons (reserving some for garnish if desired), finely mince 3 tablespoons of fresh flat-leaf Italian parsley, and cube 4 tablespoons of cold unsalted butter. Set these aside. Get a large pot of heavily salted water boiling for your pasta. Meanwhile, take 1 1/2 pounds of sea scallops and pat them extremely dry with paper towels; this step is crucial for a good sear. Season both sides generously with salt and freshly ground black pepper.
- Flour the Scallops: Place 1/4 cup of all-purpose flour in a shallow bowl. Lightly dredge each scallop in the flour, ensuring it’s evenly coated, then gently shake off any excess flour. The thin layer of flour will aid in creating a beautiful golden crust. Arrange the floured scallops on a parchment paper-lined baking sheet, making sure they are not touching.

- Sear the Scallops: Heat a large, heavy-bottomed pan (preferably nonstick or cast iron) over medium-high heat. Add 3 tablespoons of neutral oil (like vegetable or canola oil). Once the oil is shimmering and just starting to smoke lightly, carefully add the floured scallops, flat side down, to the pan. Crucially, do not move the scallops once they are in the pan. Work in batches if necessary to avoid crowding the pan, as this will prevent them from searing properly and instead cause them to steam.
- Finish Scallop Searing: Sear the scallops for approximately 1 minute per side, or until they develop a beautiful golden-brown crust. The exact time may vary based on their size and your stovetop’s heat. Once seared, immediately transfer the scallops to a plate and loosely cover them with aluminum foil to keep them warm while you prepare the pasta and sauce.
- Start the Sauce Base: While the scallops rest, add 1 pound of linguine or spaghetti to the boiling salted water and cook it until it is 1 minute less than al dente, as it will finish cooking in the sauce. Meanwhile, return to the pan used for the scallops. Reduce the heat to medium and carefully wipe out any excess neutral oil, leaving behind any flavorful browned bits (fond). Add 1/4 cup of extra virgin olive oil and the minced shallots. Sauté for 1-2 minutes until the shallots soften and become translucent. Then, add the sliced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
- Build the Sauce: Stir in 1/2 teaspoon of crushed red pepper flakes and cook for about 30 seconds to allow their flavors to bloom. Next, add the rinsed capers and 1 cup of dry white wine to the pan. Increase the heat to high and bring the sauce to a rapid simmer. Use a wooden spoon to vigorously scrape the bottom of the pan, dislodging any flavorful brown bits. Allow the wine to reduce by half, which will concentrate its flavors and cook off most of the alcohol.

- Combine and Finish the Sauce: Pour 2 cups of low-sodium chicken stock into the pan and bring the sauce back to a gentle simmer. Once simmering, add the lemon slices to infuse their citrus essence into the sauce. At this point, carefully transfer the slightly undercooked pasta directly into the pan with the sauce. Continue to cook, tossing frequently, until the pasta is perfectly al dente and has absorbed much of the sauce’s flavor.
- Final Assembly and Serving: Turn off the heat. Add the minced fresh parsley and the cubed cold butter to the pasta. Toss vigorously until the butter has melted and emulsified with the sauce, creating a glossy, rich coating on the pasta. Taste the pasta and adjust seasoning with salt and pepper if needed. Finally, gently fold in the seared scallops, tossing one last time to combine without breaking them apart. If the pasta appears too dry, add a few ounces of reserved pasta water at a time, tossing until the desired consistency is achieved. Serve your Lemon Garlic Scallop Pasta immediately, garnished with extra fresh parsley or lemon wedges. Enjoy this delicious creation!
Expert Tips for Perfect Scallop Pasta
- Ensure Scallops are Bone Dry: This is arguably the most important tip for searing scallops. Moisture on the surface of the scallops will cause them to steam instead of sear, resulting in a rubbery texture and no beautiful crust. Pat them repeatedly with paper towels until they are completely dry before seasoning and flouring. A light dredging in flour also helps wick away any remaining surface moisture, further promoting a superior sear. Using a good quality nonstick pan with adequate oil is also essential for even cooking.
- Avoid Overcooking Scallops: Scallops cook incredibly fast, often in just a minute or so per side, especially sea scallops. Overcooked scallops become tough and chewy, losing their delicate sweetness. Watch them carefully and remove them from the heat as soon as they develop that golden-brown crust. To prevent them from cooking further while the pasta finishes, reintroduce them to the dish only at the very end, just before serving.
- Serve Promptly for Best Quality: Like most seafood dishes, Lemon Garlic Scallop Pasta is best enjoyed immediately after preparation. The flavors are freshest, the pasta is perfectly al dente, and the scallops are at their peak tenderness. While leftovers are still tasty, the texture of the scallops is optimal when served fresh.
- Don’t Crowd the Pan: When searing scallops, it’s vital to give them space. Crowding the pan lowers the temperature and releases moisture, leading to steaming rather than searing. Cook scallops in batches if necessary, allowing enough room for each piece to brown properly.
- Reserve Pasta Water: Always save a cup or two of the starchy pasta cooking water. This liquid is your secret weapon for adjusting the consistency of your sauce. If the pasta seems too dry or the sauce too thick after tossing, gradually add a little reserved pasta water until you reach the perfect, silky consistency.

Serving Suggestions & Perfect Pairings
This Lemon Garlic Scallop Pasta is a complete meal in itself, but a few thoughtful additions can elevate the dining experience even further. For a light accompaniment, consider serving it with a crisp green salad tossed with a simple vinaigrette. Crusty bread is perfect for soaking up every last drop of the delicious lemon-garlic sauce. As for beverages, a dry white wine such as a crisp Pinot Grigio, Sauvignon Blanc, or a light Chardonnay would complement the flavors beautifully. For non-alcoholic options, sparkling water with a lemon twist or a refreshing iced tea would be excellent choices.
Variations to Customize Your Scallop Pasta
While this recipe is fantastic as written, feel free to experiment with these variations to suit your taste or what you have on hand:
- Add Vegetables: Incorporate some quick-cooking vegetables like cherry tomatoes (halved), spinach (wilted into the sauce), or asparagus (blanched and added at the end) for extra color and nutrients.
- Herb Alternatives: While parsley is classic, fresh basil or a mix of Italian herbs could also add a delightful twist.
- Spice Level: For those who love more heat, increase the amount of crushed red pepper flakes to taste.
- Different Proteins: If scallops aren’t available, or you’re looking for an alternative, this sauce base works wonderfully with shrimp, mussels, or even delicate white fish like cod or halibut.
- Gluten-Free Option: Easily make this dish gluten-free by using your favorite gluten-free pasta and ensuring the flour for dredging the scallops is a gluten-free all-purpose blend.
Storage and Reheating
Leftover Lemon Garlic Scallop Pasta can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a pan over low heat on the stovetop, adding a splash of chicken stock or reserved pasta water to rehydrate the sauce and prevent the pasta from drying out. Alternatively, you can reheat it in a covered, oven-safe dish at 325°F (160°C) until warmed through. Be cautious not to overcook the scallops during reheating to maintain their tender texture.

- 2 cups (480ml) low-sodium chicken stock
- 2 large lemons sliced
- 3 tablespoons minced flat-leaf Italian parsley
- 4 tablespoons (56g) cold butter unsalted and cubed
- 2 cups (480ml) reserved pasta water will most likely not need it all
Instructions
-
Bring a large pot of salted water to boil.
-
Pat the scallops very dry with paper towels. Season with salt and pepper on both sides then dredge the scallops in flour and shake off the excess. Place the scallops on a parchment paper lined baking sheet.
-
Heat a large pan to medium-high heat with the neutral oil. Once shimmering, add the scallops flat sides down and do not move. Sear the scallops for 1 minute per side or until well browned. Work in batches if required. Place the seared scallops onto a plate and set aside tented with foil to keep warm.
-
At this time, add the pasta to the boiling water and cook to 1 minute less than al dente.
-
Turn the heat to medium and wipe down the pan of excess neutral oil. Add the extra virgin olive oil along with the shallots. Cook for 1-2 minutes or until softened, then add the garlic and cook for another 1 minute or until fragrant.
-
Add the crushed red pepper flakes and cook for 30 seconds. Add the capers along with the white wine and turn the heat to high. Reduce by half while scraping the pan with a wooden spoon to dislodge any brown bits.
-
Add the chicken stock and bring the sauce to a simmer. Once simmering, add the lemon slices.
-
Add the pasta and cook until just al dente. Turn off the heat and add the parsley and butter. Toss to coat. Taste test and season with salt and pepper as required. Add the scallops and toss one more time. If the pasta is at all dry, add reserved pasta water, a few ounces at a time, and toss again. Serve immediately. Enjoy!
Notes
- Use a nonstick pan and an adequate amount of oil to sear the scallops effectively. Remember, scallops cook very quickly and can become tough if overcooked.
- Leftovers can be stored in an airtight container for up to three days in the refrigerator. Reheat gently in the oven at 325°F (160°C) covered until warm, or on the stovetop over low heat with a splash of liquid to prevent drying.
