  • 1 1/2 pounds (680g) extra large shrimp
  • 1 tablespoon (15ml) extra virgin olive oil
  • 1/2 teaspoon baking soda
  • 1 teaspoon crushed hot red pepper flakes
  • 3/4 teaspoon Diamond Crystal kosher salt

Completing the dish

  • 5 tablespoons (75ml) extra virgin olive oil divided for searing and sauce
  • 15 cloves garlic chopped
  • 3 large hot cherry peppers seeds and stems removed, chopped
  • 1 28-ounce can plum tomatoes hand crushed
  • 1 tablespoon (15ml) cherry pepper vinegar from the jar
  • 1/2 teaspoon dried oregano
  • 3 tablespoons minced Italian flat-leaf parsley
  • Salt and freshly ground black pepper, to taste

Instructions

For the shrimp

  1. Dry off the shrimp with paper towels. In a bowl, mix the shrimp with 1 tablespoon olive oil, baking soda, crushed red pepper flakes, and salt. Allow the shrimp to sit for at least 10 minutes while you prepare other ingredients.
  2. Heat a large, oven-safe cast iron or stainless steel pan with 2 tablespoons of extra virgin olive oil over medium-high heat. Once shimmering, add the shrimp in batches if necessary (do not overcrowd) and cook for only 30 seconds per side. Transfer the seared shrimp to a plate and tent with foil.
