A Time-Honored Favorite from Sip and Feast

This creamy garlic mushroom pasta holds a special place in the Sip and Feast archives. It was one of the very first pasta recipes I shared nearly seven years ago, and its popularity has only grown since then. There’s a good reason it remains a consistent reader favorite!

The magic lies in the perfect harmony of simple yet powerful flavors: the savory depth of Pecorino Romano cheese, the pungent warmth of garlic, and the robust earthiness of sautéed mushrooms. When these ingredients are lovingly tossed together with al dente pasta in a rich, velvety cream sauce, the result is nothing short of pure culinary enchantment.

This dish is robust enough to stand alone as a complete and hearty meal, but it also shines as a delightful pasta course within a larger Italian-inspired dinner. To add a touch of freshness and balance, I often serve it alongside some crisp roasted broccoli or vibrant garlic sautéed spinach.

Essential Ingredients for Perfect Creamy Garlic Mushroom Pasta

A great dish starts with great ingredients. Here’s a closer look at what you’ll need and some tips for selecting the best components for your creamy garlic mushroom pasta.

Ingredients shown for creamy garlic mushroom pasta: Pecorino Romano, garlic, parsley, heavy cream, cremini mushrooms, pappardelle pasta, and olive oil.
All the fresh ingredients you’ll need to create this delightful pasta dish.
  • Pasta: I wholeheartedly recommend using **pappardelle** for this creamy garlic mushroom sauce. Its broad, flat ribbons are exceptionally good at catching and holding onto the rich, hearty sauce and chunks of mushroom. If pappardelle isn’t available, other excellent alternatives include tagliatelle (similar to pappardelle but narrower), rigatoni, or penne pasta. The key is a pasta shape that provides a good “vehicle” for the creamy sauce.
  • Cheese: For an authentic, salty, and wonderfully piquant flavor, I opt for **Pecorino Romano**. This hard Italian cheese made from sheep’s milk adds a distinctive savory depth. If Pecorino Romano is hard to find, a high-quality Parmigiano Reggiano can be used as a substitute, offering a slightly milder yet equally delicious umami. Always grate your cheese fresh for the best flavor and melting quality.
  • Mushrooms: **Cremini mushrooms**, often labeled as baby bella mushrooms, are my go-to for their robust flavor and meaty texture that holds up beautifully in the sauce. However, common white button mushrooms are also a perfectly good choice, or you can elevate the dish with more exotic varieties like shiitake or oyster mushrooms for a unique twist. Ensure they are fresh, firm, and wiped clean (avoid rinsing unless necessary, as they absorb water).
  • Cream: **Heavy cream** is non-negotiable for achieving that luxurious, thick, and stable sauce. It has a high fat content (typically 36% or more) which prevents it from “breaking” or curdling when heated, unlike lighter dairy products. I strongly advise against using milk or half-and-half, as their lower fat content makes them prone to separating and creating a thin, undesirable sauce.
  • Garlic: This recipe calls for a generous amount of fresh garlic – about **10 cloves**. Don’t shy away from it! The garlic infuses the olive oil and mushrooms with its characteristic pungent and aromatic flavor, which mellows beautifully as it cooks into the sauce. Freshly sliced or minced garlic will offer the best results.
  • Olive Oil: A good quality extra virgin olive oil is used to sauté the garlic and mushrooms, forming the flavorful base of the sauce.
  • Fresh Parsley: Minced flat-leaf Italian parsley adds a burst of fresh, herbaceous flavor and a vibrant green color, balancing the richness of the cream sauce. Add it right at the end for maximum impact.
  • Salt and Pepper: Essential for seasoning the mushrooms and adjusting the final taste of the sauce. Remember that Pecorino Romano is quite salty, so taste before adding too much additional salt.

Step-by-Step Guide to Crafting This Delicious Pasta

Making this creamy garlic mushroom pasta is straightforward and incredibly rewarding. Follow these detailed steps to achieve a restaurant-quality meal in your own kitchen.

Preparation is Key

  1. Before you begin cooking, ensure all your ingredients are prepped. Slice or chop your garlic, slice your mushrooms, grate the Pecorino Romano, and mince your fresh parsley. This mise en place will make the cooking process smooth and enjoyable.
  2. Bring a large pot of generously salted water to a rolling boil. This is crucial for flavorful pasta.

Building the Flavor Base

  1. Sauté the Garlic: In a large, deep pan or a Dutch oven, heat 3 tablespoons of olive oil over medium heat. Add your sliced or chopped garlic and sauté gently for about 1-2 minutes, or until it turns a delicate golden color and becomes wonderfully fragrant. Be careful not to burn the garlic, as burnt garlic can taste bitter.

The crucial first steps: gently sautéing garlic to build flavor, then adding mushrooms.
  1. Cook the Mushrooms: Increase the heat to medium-high. Add the sliced mushrooms to the pan. Resist the urge to stir them constantly. Allow them to cook undisturbed for a few minutes, which helps them release their moisture and develop a beautiful caramelization. Continue cooking, stirring occasionally, until all the water has evaporated and the mushrooms are deeply browned and tender.
  2. Season the Mushrooms: Once the mushrooms are perfectly browned, season them generously with salt and freshly ground black pepper to taste. This layering of seasoning enhances their natural umami flavor.

Bringing it All Together

  1. Cook the Pasta & Prepare the Sauce: While the mushrooms are browning, add the pappardelle pasta to the boiling salted water. Cook it according to package directions until it is just about 1 minute shy of al dente. It will finish cooking in the sauce. Before draining, make sure to reserve at least 2 cups of the starchy pasta water – this is your secret ingredient!
  2. Reduce the heat on the pan with the mushrooms to medium. Pour in the heavy cream and stir in the grated Pecorino Romano. Bring the sauce to a gentle simmer, allowing the cheese to melt and the sauce to thicken slightly.
  3. Combine Pasta and Sauce: Using tongs, transfer the slightly undercooked pasta directly into the pan with the creamy mushroom sauce. Add about one cup of the reserved pasta water to the saucepan. Toss everything together vigorously, allowing the pasta to absorb the flavors and the sauce to emulsify and cling beautifully to the pasta. The starches in the pasta water will help create a wonderfully smooth and cohesive sauce.

  1. Finish and Serve: Continue to cook and toss for another minute or two until the pasta reaches perfect al dente tenderness. Turn off the heat and stir in the minced fresh Italian parsley. Taste the pasta and adjust the seasoning with more salt and pepper if needed. If the sauce appears too thick or dry, add a touch more of the reserved pasta water, a tablespoon at a time, until it reaches your desired consistency. Serve immediately and savor every delicious bite!

Pro Tips for the Best Creamy Garlic Mushroom Pasta

  • Mastering Mushroom Browning: For maximum flavor, don’t overcrowd the pan when cooking mushrooms. If you have too many, cook them in batches. High heat is essential to achieve a beautiful golden-brown sear, which locks in their earthy flavor. Allow them to release their water first, then continue cooking until they caramelize. This step significantly impacts the depth of flavor in your final dish.
  • The Magic of Pasta Water: This tip is crucial for almost any pasta recipe, but especially for creamy sauces like this one. The starchy water left over from cooking the pasta is a goldmine. It helps to emulsify the sauce, creating a smooth, velvety texture that adheres perfectly to the pasta. It also acts as a natural thickener and can be used to loosen the sauce if it becomes too thick upon standing or reheating. Always reserve at least 2 cups, even if you don’t use it all.
  • Personalize Your Plate: This recipe is incredibly adaptable! Don’t hesitate to customize it to your liking. Love garlic? Add an extra clove or two! Want more vegetables? Sauté some spinach, asparagus, or cherry tomatoes along with the mushrooms. For a heartier meal, thinly sliced grilled chicken, pan-seared scallops, or even crumbled Italian sausage would be fantastic additions. A pinch of red pepper flakes can also add a subtle warmth.
  • Taste and Adjust: Always taste your sauce before serving and adjust the seasoning. The saltiness of Pecorino Romano can vary, so you might need less added salt than you think. A final grind of black pepper is always welcome.
  • Al Dente Perfection: Aim for pasta that is firm to the bite but still tender. Since the pasta will continue to cook briefly in the sauce, cooking it “1 minute shy of al dente” ensures it doesn’t become overcooked and mushy.

Serving Suggestions and Pairings

While this creamy garlic mushroom pasta is satisfying on its own, here are some ideas to round out your meal:

  • Garlic Bread or Crusty Ciabatta: Perfect for soaking up every last drop of the luscious sauce.
  • Simple Green Salad: A light, crisp salad with a vinaigrette dressing offers a refreshing contrast to the rich pasta.
  • Roasted Vegetables: As mentioned, roasted broccoli or sautéed spinach are excellent choices. Asparagus or green beans would also be lovely.
  • Wine Pairing: A light-bodied white wine like a Pinot Grigio or Sauvignon Blanc complements the creaminess without overpowering the delicate mushroom and garlic flavors.

Storing and Reheating Leftovers

Creamy garlic mushroom pasta makes fantastic leftovers, but cream sauces can sometimes be tricky to reheat. Here are some tips:

  • Storage: Store any leftover pasta in an airtight container in the refrigerator for up to 3 days.
  • Reheating: When reheating, cream sauces have a tendency to thicken significantly and sometimes “break” (separate). To restore its creamy consistency, reheat gently on the stovetop over low heat, adding a splash of extra heavy cream and a spoonful of grated cheese (Pecorino Romano or Parmesan) or a bit of reserved pasta water. Stir continuously until the sauce re-emulsifies and becomes smooth and warm. Avoid microwaving on high power, as this can exacerbate the breaking of the sauce.

Ready in about 30 minutes, my creamy garlic mushroom pasta is the perfect weeknight meal and couldn’t be easier to make!

Ingredients

  • 1 pound pappardelle pasta
  • 3 tablespoons olive oil
  • 10 cloves garlic, sliced or chopped
  • 1 pound mushrooms, sliced (cremini or white button)
  • Salt and pepper to taste
  • 1 cup Pecorino Romano, grated (or Parmigiano Reggiano)
  • 1 cup heavy cream
  • 2 cups pasta water (will most likely not need all of it)
  • 1/2 cup minced flat-leaf Italian parsley

Instructions

  1. Bring a large pot of salted water to a rolling boil.
  2. Heat a large pan over medium heat with the olive oil. Add the garlic and sauté gently until it turns golden and fragrant, about 1-2 minutes. Increase the heat to medium-high, add the sliced mushrooms, and cook until they release their water and start to brown. Season the mushrooms with salt and pepper to taste.
  3. Meanwhile, add the pappardelle pasta to the boiling water and cook until 1 minute less than al dente. Reserve at least 2 cups of pasta water before draining.
  4. Reduce the heat in the mushroom pan to medium. Pour in the heavy cream and stir in the grated Pecorino Romano. Bring the sauce to a gentle simmer.
  5. Transfer the slightly undercooked pasta directly into the pan with the sauce. Add 1 cup of the reserved pasta water and toss well to combine. Continue cooking and tossing for 1-2 minutes until the pasta reaches al dente. Turn off the heat and mix in the minced parsley. Taste and adjust salt and pepper as needed. If the sauce is too thick, add a touch more pasta water until desired consistency is reached. Serve immediately.

Notes

  • Salt levels: Only 1 teaspoon of kosher salt was suggested due to the salty Pecorino Romano cheese. Always taste and adjust according to your personal preference.
  • Pasta water: Keeping extra pasta water handy is crucial for thinning the cream sauce, as it can thicken quickly, especially upon standing.
  • Pasta: Most thick pasta shapes, such as tagliatelle, rigatoni, or penne, work wonderfully for this recipe if pappardelle is unavailable.
  • Leftovers: Creamy garlic mushroom pasta can be stored in the fridge for up to 3 days. To restore the creamy consistency when reheating, gently warm on the stovetop and mix in a bit of extra cream, grated cheese, or pasta water to re-emulsify the sauce.
