Essential Ingredients for Your Summer Shaved Zucchini Salad

Crafting this exquisite shaved zucchini salad begins with selecting fresh, high-quality ingredients. Each component plays a crucial role in achieving the salad’s signature flavor and texture. Below, you’ll find a visual guide and detailed notes to help you gather everything you need.

Ingredients shown: extra virgin olive oil, garlic, Dijon mustard, lemon, basil, zucchini, yellow squash, baby arugula, pine nuts, and block of Parmigiano Reggiano cheese.
  • Zucchini and Summer Squash: We love using a mix of medium-sized green zucchini and vibrant yellow squash to add visual appeal and a subtle variation in flavor. Feel free to use only zucchini if that’s what you have on hand. There’s no need to peel either vegetable; the skin adds nutrients and a pleasant texture. Choose firm, blemish-free squash for the best results.
  • Fresh Greens: Baby arugula is our top pick for its distinctive peppery flavor, which beautifully complements the mildness of the zucchini and the tang of the dressing. If arugula isn’t to your taste, a delicate mixed salad green blend would also work well, offering a slightly milder flavor profile.
  • Parmigiano Reggiano Cheese: The complex, nutty, and slightly salty notes of freshly shaved Parmigiano Reggiano are indispensable in this salad. Its sharp flavor adds depth and a luxurious finish. Avoid pre-shredded or grated varieties, as they often lack the same intensity and fresh texture.
  • Pine Nuts (Pignoli): These small, buttery nuts provide a wonderful textural contrast and a rich, toasted flavor when lightly browned. Pine nuts can sometimes be pricey, so keep an eye out for them at warehouse clubs like Costco or specialty stores like Trader Joe’s for better value. If pine nuts are unavailable or outside your budget, slivered almonds or even chopped walnuts make an excellent alternative.
  • Lemon: Fresh lemon juice and zest are the backbone of the vinaigrette, providing essential brightness and acidity. Always opt for fresh lemons; bottled juice simply won’t yield the same vibrant flavor.
  • Extra Virgin Olive Oil: A good quality extra virgin olive oil is crucial for a flavorful vinaigrette. Its fruity notes will elevate the entire salad.
  • Dijon Mustard & Garlic: These ingredients add emulsifying properties to the vinaigrette, helping it come together smoothly, and provide a subtle pungent kick that enhances the overall flavor.
  • Fresh Basil: The sweet, aromatic notes of fresh basil are key to this salad’s summery appeal.
  • Flaky Sea Salt & Coarse Black Pepper: Essential for seasoning the salad to perfection. The flaky sea salt adds a delightful textural crunch and bursts of salinity.

Crafting Your Shaved Zucchini Salad: A Step-by-Step Guide

Creating this stunning and delicious salad is surprisingly simple. Follow these steps to achieve perfect results every time.

  1. Prepare the Pine Nuts: Begin by toasting your pine nuts. In a small, dry pan set over medium heat, add 1/2 cup of pine nuts. Toast them gently, stirring frequently, until they turn a beautiful golden brown and become fragrant. This usually takes just a few minutes, so watch them closely to prevent burning, as they can quickly go from toasted to burnt. Once golden, immediately transfer them to a small bowl and set aside to cool. This step enhances their natural nutty flavor and adds an irresistible crunch to the salad.

  1. Whisk the Lemon Vinaigrette: In a large mixing bowl, combine 2 tablespoons of freshly squeezed lemon juice, 1 teaspoon of Dijon mustard, and 1 clove of grated or finely minced garlic. Gradually whisk in 6 tablespoons of extra virgin olive oil until the dressing is well emulsified and creamy. Set the vinaigrette aside, allowing the flavors to meld while you prepare the other ingredients.
  2. Shave the Zucchini and Squash: The key to this salad is the delicate texture of the shaved vegetables. Using a mandoline slicer or a high-quality vegetable peeler, carefully shave 2 medium zucchini and 1 medium yellow squash into long, thin ribbons. Apply even pressure for consistent thickness. Continue shaving until you reach the seedy core of each vegetable, then stop. The core can be reserved for another recipe (such as stir-fries or soups) or composted. Gather the beautiful ribbons and prepare them for tossing.

  1. Assemble and Serve: Add 2 packed cups of baby arugula, the shaved zucchini and squash ribbons, and 2 teaspoons of fresh lemon zest to the bowl containing the whisked vinaigrette. Toss gently but thoroughly to ensure all the vegetables are evenly coated with the dressing. Next, sprinkle the toasted pine nuts and 1/4 cup of fresh basil leaves over the salad. If your basil leaves are large, tear or roughly chop them before adding. Finish the salad with about 1/4 cup of freshly shaved Parmigiano Reggiano cheese. Serve immediately, seasoning with flaky sea salt and freshly ground black pepper to taste. Enjoy the burst of fresh, summery flavors!

Pro Tips for the Perfect Shaved Zucchini Salad

Achieving a truly outstanding shaved zucchini salad is all about technique and fresh ingredients. Here are a few expert tips to elevate your salad experience:

  • Lemon Maximization: To extract the maximum juice from your lemons, rinse them in warm water for a few seconds. Then, place them on a flat surface and roll them back and forth with moderate pressure before slicing. This helps to break down the membranes inside, making them easier to squeeze.
  • The Art of Shaving: While a mandoline creates uniform, razor-thin ribbons, a sturdy vegetable peeler can also produce excellent results, especially if you don’t own a mandoline. Aim for ribbons that are thin enough to be pliable but still have a slight crunch.
  • Don’t Skimp on Seasoning: Raw zucchini has a very mild flavor, so the final seasoning is critical. Flaky sea salt (or good quality coarse salt) and freshly ground black pepper are essential for bringing out all the flavors and ensuring the salad isn’t bland. Taste and adjust as needed before serving.
  • Serve Immediately: This salad is best enjoyed fresh. Zucchini, like most raw vegetables dressed in vinaigrette, will soften over time. For the freshest texture and brightest flavor, assemble and serve within 30 minutes of preparation.
  • Quality of Olive Oil: Since olive oil forms the base of your vinaigrette, using a high-quality extra virgin olive oil will make a noticeable difference in the overall flavor profile of your salad.

Customizing Your Shaved Zucchini Salad

One of the joys of cooking is making a recipe your own. This shaved zucchini salad is incredibly flexible, allowing for various customizations to suit your taste and what you have available:

  • Alternative Greens: While arugula adds a lovely peppery bite, feel free to experiment with other greens like delicate spinach, tender butter lettuce, or a spring mix for a milder flavor.
  • Nut Swaps: If pine nuts aren’t an option, consider toasted slivered almonds, chopped walnuts, or even pistachios for a different nutty dimension.
  • Cheese Variations: While Parmigiano Reggiano is classic, freshly grated Pecorino Romano could offer a sharper, saltier kick. For a creamier element, crumbled feta or fresh goat cheese would also be delicious additions.
  • Add More Herbs: Beyond basil, fresh mint, parsley, or dill would all be excellent additions, providing different layers of aroma and flavor.
  • Boost the Veggies: Thinly sliced radishes or cucumbers can add extra crunch and freshness. For a touch of color, shaved carrots or bell peppers could also be incorporated.
  • Protein Power-Up: Transform this side salad into a light main course by adding grilled shrimp, shredded chicken, or chickpeas.
  • Spicy Kick: A pinch of red pepper flakes in the vinaigrette or sprinkled over the top can add a pleasant heat.

Health Benefits of Zucchini

Zucchini is a powerhouse of nutrition, especially when enjoyed raw in dishes like this salad. It’s incredibly hydrating due to its high water content and offers numerous health benefits:

  • Rich in Nutrients: Zucchini is a good source of Vitamin C, Vitamin A (especially in the skin), potassium, folate, and manganese.
  • Antioxidant Properties: It contains antioxidants like carotenoids (beta-carotene, lutein, zeaxanthin), which are beneficial for eye health and may protect against cell damage.
  • Digestive Health: Its high water and fiber content promote healthy digestion and can help prevent constipation.
  • Low in Calories: As a low-calorie vegetable, zucchini is excellent for weight management and can be enjoyed generously.
  • Blood Sugar Control: The fiber in zucchini can also help stabilize blood sugar levels.

Storage and Make-Ahead Tips

For optimal freshness and texture, this shaved zucchini salad is truly best when served immediately. However, if you need to prepare components ahead of time or have leftovers, here are some guidelines:

  • Make-Ahead Vinaigrette: The lemon vinaigrette can be prepared up to 3 days in advance and stored in an airtight container in the refrigerator. Whisk or shake well before using.
  • Toasted Pine Nuts: Toast the pine nuts ahead of time and store them in an airtight container at room temperature for up to a week. This keeps them crisp and ready to use.
  • Shaved Zucchini: Zucchini ribbons can be shaved a few hours in advance. Store them loosely covered in the refrigerator, but avoid dressing them until just before serving to prevent them from becoming too soft and watery.
  • Leftovers: If you have leftovers, they can be stored in an airtight container in the refrigerator for up to 2-3 days. Be aware that the zucchini will soften considerably, and the arugula may wilt. While still edible, the texture won’t be as crisp as freshly made.

Frequently Asked Questions

Here are answers to some common questions you might have about making this delicious shaved zucchini salad:

  • Do I need to salt the zucchini first to draw out water? For this recipe, it’s generally not necessary. The delicate ribbons are meant to be light and fresh. Salting first (a process called “degorging”) is more common for recipes where zucchini is cooked or needs to maintain a very firm texture, or if you’re dealing with very large, watery zucchini. For this salad, simply shave and dress!
  • Can I use a food processor to shave the zucchini? While some food processors have a slicing attachment, it’s often difficult to get ribbons as thin and long as you would with a mandoline or vegetable peeler. If the slices are too thick, the salad won’t have the same delicate texture.
  • What if I don’t like arugula? No problem! You can substitute arugula with other tender greens like baby spinach, spring mix, or even finely chopped romaine for a crisp texture.
  • Is this salad suitable for meal prep? It’s best assembled right before serving. However, you can prep all components (toast nuts, make dressing, shave zucchini) and store them separately. Combine them just before you’re ready to eat for the freshest experience.
  • Can I add protein to make it a main dish? Absolutely! Grilled chicken, shrimp, canned tuna (drained), or even a handful of cooked chickpeas or lentils would make this a more substantial meal.

This easy shaved zucchini salad with pine nuts, arugula, and Parmigiano Reggiano is easy to make and perfect alongside your favorites from the grill.

Ingredients

For the vinaigrette

  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic paste or grated

For the salad

  • 2 medium zucchini
  • 1 medium yellow squash
  • 2 packed cups baby arugula
  • 1/4 cup shaved Parmigiano Reggiano
  • 1/4 packed cup small fresh basil leaves larger leaves should be chopped
  • 1/2 cup pine nuts toasted
  • 2 teaspoons lemon zest
  • 1/4 teaspoon coarse black pepper plus more to taste
  • 1/2 teaspoon flaky sea salt plus more to taste

Instructions

  • Toast the pine nuts until golden brown in a pan over medium-low heat, paying close attention to not burn. Place them into a small bowl and set aside.
  • In a large bowl whisk together the extra virgin olive oil, fresh lemon juice, Dijon mustard, and grated garlic for the vinaigrette. Set aside.
  • Shave the zucchini and squash with a vegetable peeler or mandoline into long, thin ribbons. Stop making ribbons once the seedy core becomes visible.
  • Add the baby arugula, shaved zucchini and squash, and lemon zest to the vinaigrette and toss well to coat. Sprinkle the toasted pine nuts, fresh basil leaves, and shaved Parmigiano Reggiano on top. Serve right away, seasoned with flaky sea salt and coarse black pepper to taste. Enjoy!

Notes

  • Using a vegetable peeler works best to get super thin slices of zucchini and squash, but a mandoline or sharp knife can also be used.
  • Don’t skip the final seasoning of flaky sea salt (or coarse salt) since raw zucchini can be bland.
  • Leftovers can be saved for up to 3 days in an airtight container in the refrigerator, but note that the zucchini will soften.
